This is another Christmas favorite in my house! I used to have so much fun pressing the cherries onto each cookie when I was younger. These cookies are sweet and delicious, both with and without the nuts! Cook time is if you bake about a dozen at a time.

Provided by babygirl36

Number Of Ingredients 7

40 graham crackers, finely crushed
1 cup confectioners sugar
1/2 cup butter, melted
16 oz. cream cheese, softened
16 oz. cool whip
2 cup confectioners sugar
2 (12 oz) cherry pie filling

Steps:

  • Mix graham cracker crumbs, 1 cup confectioners sugar and butter together in a bowl; press into a 9x13 pan. Whisk cream cheese, cool whip and 2 cups confectioners sugar together in a bowl until smooth; spread over graham cracker crust. Pour cherry pie filling over cream cheese layer. Refrigerate until firm, at least an hour.

Tips:

  • Use fresh cherries. Fresh cherries have a sweeter flavor and more vibrant color than frozen or canned cherries.
  • Pit the cherries before using them. You can use a cherry pitter or a paring knife to remove the pits.
  • Don't overcook the cherry filling. Overcooked cherries will lose their flavor and texture.
  • Chill the cherry delight before serving. This will allow the flavors to meld and the dessert to firm up.
  • Serve the cherry delight with whipped cream or ice cream. This will add a delicious creamy touch to the dessert.

Conclusion:

Opal's Cherry Delight is a delicious and easy-to-make dessert that is perfect for any occasion. The sweet and tart cherries are complemented perfectly by the creamy filling and flaky crust. This dessert is sure to be a hit with everyone who tries it.
