1/4 cup small diced red peppers
2 tablespoons small diced yellow peppers
1/4 cup small diced green peppers
Salt and freshly ground black pepper
1/4 cup peeled, seeded, and small diced tomatoes
8 large eggs
1/4 cup pitted black olives
3 thin slices Serrano or prosciutto ham, sliced into thin ribbons
6 leaves basil, chiffonade

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat a cast iron skillet over medium heat. When the pan is hot, add the olive oil and heat. Add the peppers and cook until they start to caramelize, about 5 minutes. Season with salt and pepper. Add the tomatoes and cook for 2 minutes.

2 tablespoons extra-virgin olive oil
1 medium onion, chopped (1 cup)
1 tomato chopped
1 large bunch Swiss chard, ends trimmed, stems thinly sliced, leaves cut into 1-inchs strips
Coarse salt
1/4 teaspoon black pepper
1 dozen eggs
1 teaspoon Sriracha
3-4 ounces cheddar, shredded (about 3/4 cup)

Steps:

  • Preheat the oven broiler.
  • Heat a 12-inch nonstick (oven-safe) over medium-high heat. Add 1 tablespoon olive oil.
  • Add onion to pan and season with salt. Saute onion for 2 minutes and add chopped tomato. Stir and cook 1 minute. Add Swiss chard and season with salt and pepper. Cook for 5 minutes. Remove to plate and return the pan to medium-high heat.
  • Add 1 tablespoon olive oil. Crack 1 dozen eggs into a bowl and add 1 teaspoon Sriracha. Whisk eggs together and pour into pan. Allow eggs to set a bit. 2 ounces pepperoni, to cover 1/2 of your omelette
1/4 cup mushroom, sliced

  • In a small bowl beat your eggs. Heat a frying pan, spray with non-stick spray or coat the bottom with oil.
  • Pour eggs into the pan and cook until you are able to get a spatula under it and flip without breaking it.

2 eggs, beaten
2 tablespoons water
1/4 cup bell pepper, any color, finely chopped
1/4 cup onion, finely chopped
1/2 teaspoon italian seasoning
1/2 cup mushroom, sliced
1/2 cup pizza sauce
5 slices pepperoni
1/4 cup mozzarella cheese, shredded
1 tablespoon parmesan cheese (optional)
1/4 cup sausage (optional)

Steps:

  • Beat eggs with water; season with salt and pepper. Set aside. Spray an 8-inch omelet pan or nonstick skillet with cooking spray. Heat skillet over medium heat.
  • In small saucepan, heat pizza sauce.
  • Add sausage to skillet. Cook until browned. Set aside.
  • Add pepper, onion, mushrooms, and seasoning to skillet. Cook, covered, over medium heat until peppers are soft, about 2 to 3 minutes.
  • Add cooked sausage to pepper mixture. Pour eggs over pepper mixture. (Eggs should set immediately at edges). With an inverted pancake turner, carefully push cooked portions at edges toward center so uncooked portions can reach hot pan surface, tilting pan and moving cooked portions as necessary. Slide from pan onto plate. Spoon on remaining sauce. Sprinkle with Parmesan.
