MY FAVORITE OPEN-FACED TOMATO SANDWICH

My Favorite Open-Faced Tomato Sandwich image

This is my favorite way to eat tomatoes, developed accidentally by my brother-in-law on a "empty cupboard" day. I've been addicted ever since! It's a great simple lunch or snack.

Time 15m

Yield 4 sandwiches, 2 serving(s)

Number Of Ingredients 5

2 roma tomatoes
4 slices bread (I prefer the specialty bakery or homemade, but any will do)
boursin cheese (I like goat cheese on these too)
margarine or Pam cooking spray, for toasting
kosher salt

Steps:

  • Spread butter, margarine, or Pam on both sides of each piece of bread.
  • Grill on a cast iron skillet, non-stick pan, or whatever it takes to get them toasted. (You can toast them in a toaster and then butter them, but I've found that makes them a little soggy.).
  • In the meantime, slice each tomato into 8 slices.
  • When the bread is toasted on both sides, spread Boursin or goat cheese on one side of the bread.
  • Top each bread slice with four tomatoes.
  • Sprinkle each sandwich with kosher salt to taste.

Yield Makes 3 open-faced sandwiches

3 slices organic bread, cut into 1-inch-thick rounds
1 tomato, sliced 1/2 inch thick
6 slices white cheddar cheese, cut into triangles
Coarse salt and freshly ground pepper

Steps:

  • Toast the bread rounds in a toaster oven.
  • Place cheddar cheese on top of bread rounds. Toast them in oven until cheese has melted.
  • Top cheese with tomato slices. Season with salt and pepper to taste.

Tips:

  • Choose the right bread: A hearty, crusty bread will hold up to the weight of the toppings and provide a sturdy base for the sandwich.
  • Use a variety of mushrooms: Different types of mushrooms will add different flavors and textures to the sandwich. Try a mix of cremini, shiitake, and oyster mushrooms.
  • Cook the mushrooms properly: Mushrooms should be cooked until they are tender and slightly browned. This will bring out their flavor and make them more digestible.
  • Use a flavorful cheese: Goat cheese is a classic choice for mushroom sandwiches, but you can also use other cheeses, such as cheddar, mozzarella, or blue cheese.
  • Add some fresh herbs: Fresh herbs, such as thyme, rosemary, or basil, will brighten up the flavors of the sandwich.
  • Serve immediately: Mushroom sandwiches are best served immediately after they are made, while the bread is still warm and the cheese is melted.
