1 tablespoon olive oil
1 boneless pork shoulder roast (3 pounds), patted dry
Salt and pepper
1 large yellow onion, thinly sliced
1 cup orange juice concentrate, thawed
1 cup ketchup
2 tablespoons light-brown sugar
4 teaspoons white-wine vinegar
4 teaspoons Worcestershire sauce
2 teaspoons hot sauce

Steps:

  • Preheat oven to 350 degrees. Season pork with salt and pepper. Add to a large, straight-sided skillet along with onion and 1 1/2 cups water. Cover with parchment-lined foil and transfer to oven. Cook 2 hours.
  • Meanwhile, in a medium saucepan, combine 1 teaspoon salt, juice concentrate, ketchup, brown sugar, vinegar, Worcestershire sauce, and hot sauce. Bring to a simmer and cook until mixture has thickened, 18 to 20 minutes. Reserve 1 3/4 cup sauce.
  • Remove skillet from oven and coat pork with sauce. Return to oven and cook, uncovered, until tender, about 2 hours, basting pork with sauce every 15 minutes. Skim fat, and shred pork and toss with reserved sauce to serve.

I came up with this delicious barbecue sauce trying to keep in mind what I could have on hand in the pantry or in the freezer in a pinch. Use this as a finishing sauce (not a marinade) during the last 7-10 minutes if grilling or the last 30 minutes if cooking in the oven.

2 chipotle chiles in adobo
1/2 cup frozen orange juice concentrate
1/4 cup molasses
1/2 cup ketchup
1/4 cup soy sauce
1/2 cup cider vinegar
2 teaspoons fresh ginger, peeled and finely chopped (or ginger juice, 1 inch of frozen thawed, see below)
4 garlic cloves
1 small red onion

Steps:

  • Combine all ingredients and puree in a food processor and blend until smooth. Bring to a boil in a tall saucepan, drop to a low simmer and cook, stirring often, until thick, about 30 minutes.
  • Two chipotle make this lightly smokey and spicy. Use more if you like things spicy! Freeze the left over chipotle from the can in a covered ice cube tray or pressed flat in freezer safe plastic wrap for future use.
  • Freeze the left over fresh ginger washed, air dried, not peeled and cut into one inch pieces. When you need 2 tsps, just take out an inch, let it defrost in a small bowl and squeeze out the juice. Fantastic!
  • This is enough to cover one whole chicken or 2 baby back ribs with some sauce left over for those who want a little more -- .

2 Cups "Kansas City Style BBQ sauce" (Wegmans brand)
1 Cup KC Masterpiece Original BBQ Sauce
1 cup orange flower honey
1 Cup prepared mustard
1/2 tsp Worcestershire sauce
1 1/2 cups bourbon
1/2 cup sweat vermouth
Zest of one med orange
Juice from 1/2 med orange
1 Tab liquid smoke

Steps:

  • Mix all ingredients together and cook over med heat for 20 minuets. If using this for meatballs put a package (96 pieces) of cocktail meatballs in half the sauce and simmer for 30 min over med heat. Stir so sauce sticks to the meatballs and not to the bottom of the pan. Watch it or it will burn.
