3 scallions, sliced
2 garlic cloves, minced
1 tablespoon fresh ginger, peeled and minced
1 tablespoon orange zest, grated
3/4 lb boneless sirloin steak, trimmed and cut into matchstick-thin strips
8 baby carrots, cut into quarters
1/3 lb sugar snap peas or 1/3 lb snow peas
2 tablespoons reduced sodium soy sauce
2 tablespoons orange juice
1 teaspoon cornstarch
1 tablespoon water, cold

Steps:

  • Spray a large nonstick wok or skillet with nonstick spray and set over high heat. When a drop of water sizzles on it, add the scallions, garlic, ginger and orange zest. Stir-fry until the scallions soften, about 1 minute.
  • Add the beef and stir-fry until browned, about 3 minutes.
  • Add the sugar snap peas and baby carrots; stir-fry until crisp-tender, about 2 minutes.

2 tablespoons Dijon mustard
1/4 teaspoon salt
3/4 cup whole wheat crackers, crumbled
1 tablespoon orange zest, grated
1 shallot, finely chopped
1/4 teaspoon ground pepper, freshly ground
12 ounces boneless skinless chicken thighs

Steps:

  • Preheat oven to 350 degrees. Spray a nonstick baking sheet with nonstick cooking spray.
  • In a small bowl, combine the orange juice, mustard and salt. On a sheet of wax paper combine the cracker crumbs, orange zest, shallot, and pepper. Brush the chicken on both sides with the mustard mixture then dredge in the crumbs, firmly pressing the crumbs to coat both sides. Place the chicken on the baking sheet.

1/4 cup thawed frozen orange juice concentrate
1 teaspoon olive oil
3/4 lb boneless skinless chicken breast, sliced into 3-inch strips
1 teaspoon ground coriander
1 teaspoon chili powder
1 pinch salt
14 ounces roasted red peppers, drained and chopped
1/4 cup light sour cream

Steps:

  • Preheat the oven to 200. Wrap the tortillas in foil and bake untiln warmed through, about 5 minutes.
  • Meanwhile, in a large nonstick skillet, heat the juice concentrate and oil over medium-high heat until bubbling.
