3 cups sugar
3/4 cup heavy whipping cream
1 package white baking chips (10 to 12 ounces)
1 jar (7 ounces) marshmallow creme
3 teaspoons orange extract
12 drops yellow food coloring
5 drops red food coloring

Steps:

  • Grease a 13x9-in. pan with 1-1/2 teaspoons butter; set aside., In a large heavy saucepan, combine the sugar, cream and remaining butter. Cook and stir over low heat until sugar is dissolved. Bring to a boil; cook and stir for 4 minutes. Remove from the heat; stir in chips and marshmallow creme until smooth., Remove 1 cup and set aside. Add orange extract and food coloring to the remaining mixture; stir until blended. Pour into prepared pan. I've never melted the chocolate in the microwave instead of a double boiler but I suppose it's possible.

1 1/2 cups vanilla wafer crumbs
1/4 cup orange liqueur (Curaçao, Grand Marnier, Cointreau or Triple Sec)
1 (6 ounce) package semisweet chocolate morsels
2 tablespoons butter
2 tablespoons light corn syrup
1/3 cup powdered sugar
1 1/2 cups finely chopped pecans or 1 1/2 cups walnuts

Steps:

  • Mix the crumbs with the liqueur and set aside.
  • Melt the chocolate with the butter in the top of a double boiler.
  • Stir chocolate mixture and corn syrup into crumb mixture to blend.

2 tablespoons light corn syrup
1 tablespoon butter
1 tablespoon grated orange peel
2 tablespoons orange juice

Steps:

  • Grease 8-inch square pan with butter. In 2-quart heavy saucepan, stir together sugar, milk, corn syrup, 1 tablespoon butter and the orange peel. Cook over medium heat, stirring constantly, until sugar is dissolved. Cook, stirring occasionally, to 234°F on candy thermometer or until small amount of mixture dropped into cup of very cold water forms a soft ball that flattens when removed from water; remove from heat. Cool without stirring to 120°F, about 1 hour. (Bottom of saucepan will be lukewarm.)
  • Add orange juice and extract. Beat vigorously and continuously with wooden spoon 5 to 10 minutes or until mixture is thick and no longer glossy. (Mixture will hold its shape when dropped from a spoon.) Quickly spread in pan. Let stand about 1 hour or until firm. Cut into 1-inch squares. Store in airtight container at room temperature.
