ORANGE-GINGER GLAZED SALMON
Salmon is my version of fast food. It's already so wonderfully flavorful on its own that I don't have to put much effort into it. A brush of oil and a sprinkle of salt and pepper, plus a few minutes in a hot oven or skillet and dinner is ready. In this recipe I whisk together marmalade, soy sauce and some freshly grated ginger, then I add a squeeze of fresh orange juice, pour it over the salmon, and then into the oven it goes. The result is sticky, sweet, tangy and oh so flavorful!

Perfect for the hot days of summer the sweet orange-ginger glaze has just a tinge of heat from hot pepper flakes. If you prefer, an indoor grill or saute pan can be used to cook the salmon. - Combine the lime juice, orange juice, orange marmalade, ginger, mustard, salt and pepper flakes in a small saucepan and bring to a boil. Reduce the heat and simmer on low heat for 5 minutes. until reduced to almost half. Remove from heat; swirl in the butter. Set aside.
- While sauce is cooking, place salmon on a hot grill and cook for 5 minutes per side, or until fish flakes easily when tested with a fork.
- Spoon sauce across salmon and serve.
Tips:
- Pick the freshest salmon you can find. Fresh salmon will have a bright orange-pink color and firm flesh. Avoid any salmon that looks dull or has a slimy texture.
- Make sure the salmon is cooked through before serving. The best way to check is to insert a fork into the thickest part of the salmon. If the salmon flakes easily and is opaque throughout, it is cooked through.
- Don't overcook the salmon. Overcooked salmon will be dry and tough. Cook the salmon just until it is cooked through to preserve its delicate flavor and texture.
- Use a flavorful glaze. The glaze is what will give the salmon its delicious flavor. Be sure to use a glaze that you enjoy the taste of.
- Serve the salmon immediately. Salmon is best served immediately after it is cooked. This will ensure that it is hot and juicy.
