1/2 cup sugar

Steps:

  • Beat egg white until foamy.

6 large sweet potatoes
6 tablespoons brown sugar, packed
2 eggs, beaten
1/4 cup orange juice
2 tablespoons unsalted butter, melted
1 teaspoon real vanilla extract
1/2 teaspoon salt
3 tablespoons unsalted butter, softened
1/2 cup brown sugar, packed
3/4 cup chopped pecans
9 pecan halves (optional)

Steps:

  • Preheat oven to 375. Bake potatoes until very tender -- about 1 hour and 20 minutes. Let cool, and reduce oven heat to 350.
  • Scoop potatoes out of peels and mash until desired texture. Stir in remaining ingredients and place in casserole dish (9 X 9).
  • Combine topping ingredients and sprinkle over potatoes. Bake until done at 350 -- about 1/2 hours.

2 tablespoons red wine vinegar
2 tablespoons coarsely chopped red onion
1 jalapeno pepper, coarsely chopped
1 tablespoon ancho chile powder
3/4 cup olive oil
1 tablespoon honey
Salt and pepper to taste

1/4 cup water
1/8 teaspoon cayenne pepper

BROWNIE BOTTOM
1 box fudge brownie mix, prepared as box suggests for fudge like brownies
ORANGE MARMALADE CREAM CHEESE LAYER
2 pkg (8 oz.) cream cheese, softened
1/2 c orange marmalade
1/4 c powdered sugar
1 Tbsp orange juice
1 tsp vanilla
2 Tbsp fudge sauce, squeezable bottle
2 medium eggs
TANGY CREAM CHEESE FROSTING
1/2 - 3/4 c tang drink mix, dry (approx. i added a little at a time till i got color and taste i wanted)
1 pkg (8 oz.) cream cheese, softened
1 tsp orange extract
1 1/2 Tbsp orange juice
1 1/2 c powdered sugar
1/4 stick butter
ORANGE GLAZED PECANS
2 Tbsp orange juice
1 tsp tang
3 tsp orange rind
1/4 c sugar
1/2 tsp cinnamon
1 tsp nutmeg
2 c roasted pecans

  • 1. Prepare you brownie mix and pour into a greased 9X13 pan
  • 2. Blend the cream cheese, marmalade, powdered sugar, orange juice, vanilla together. Whisk your eggs in a separate bowl and then add to the mix. Blend well. Should be a creamier easy spreadable consistancy. Now pour that over the brownies mix and gently spread over the top to cover. Next, take your fudge sauce and drizzle on top of cream cheese mixture. I used a knife and spreaded it out over the top. Bake as directed at 350 degrees but check on it. It may take more time due to the layering.
  • 3. Prepare your frosting and set aside. The frosting was harder to give you amounts because I just kept putting more tang until I got my desired color and taste. Also, you may want to put more or less powdered sugar too.
  • 4. The pecans are extremely tasty but I burnt them to blackness the first batch trying to roast them. lol Seriously though, they are expensive and I told myself you have to eat those. lol....I started eating them and couldn't eat anymore because they were too burnt. Well, you take this mixture (except for pecans) and cook in in a pan till it comes to a boil. I cooked mine for a few minutes and then took it off the burner. But, you want to cook it longer till a syrup type texture. Maybe 8 to 10 minutes. Then, pour your 2 cups of roasted pecans into the glaze and mix thoroughly. Then place them on parchment paper and spread them out to dry.
  • 5. Once you remove your brownies from oven let cool and then ice. Top with your orange glazed pecans.

  • Use fresh oranges for the best flavor. If you only have bottled juice, add a teaspoon of orange zest to the glaze to perk up the flavor.
  • To make sure the pecans are evenly coated, stir them constantly while you're mixing them with the glaze.
