8 ounces penne noodles, cooked according to package directions
2 cups packed fresh baby spinach leaves
1 cup sliced strawberries
1 cup pineapple chunks
1/4 cup dried cranberries, or dried blueberries
1/2 cup salted cashews, or other nut like pecans or walnuts
orange poppy seed dressing
1/2 cup extra virgin olive oil
1/3 cup apple cider vinegar
1/4 cup plain greek yogurt
1 tablespoon dijon mustard
3 tablespoons honey
1/3 cup orange juice
2 teaspoons poppy seeds
optional: pinch of salt and pepper

Steps:

  • Instructions 1.Combine all dressing ingredients in a jar, cover, and shake well. Set aside. 2.Combine penne, spinach, strawberries, pineapple, cranberries, and cashews in a large bowl and toss with the prepared dressing. 3.Serve immediately or cover and chill for 1 hour before serving.

1 cup mayonnaise

5 cups of cooked and cooled shell pasta
3 medium chicken breasts, cook,cooled and diced
1 1/4 cups red grapes or 1 1/4 cups seedless grapes, cut in half
1 large English cucumber, cut into bite size pieces
6 scallions, sliced
4 navel oranges, peeled and sectioned with a knife
1 head lettuce, chopped finely
1 grated carrot
1/4 cup vegetable oil
1/4 cup white wine vinegar
3/4 cup orange juice concentrate
1 teaspoon salt
1/2 teaspoon pepper

  • In a mixing bowl combne all of the salad ingredients.

16 ounces medium pasta shells, cooked and drained
1 lb boneless skinless chicken breast, cooked, cooled and cut into 1-inch cubes
1 1/4 cups green seedless grapes, halved
1 large cucumber, peeled, seeded and cut into chunks
6 green onions, sliced
3 navel oranges, peeled and sectioned
3/4 cup thawed frozen orange juice concentrate
1/4 cup vegetable oil
1/4 cup white wine vinegar
1 teaspoon salt
1/2 teaspoon pepper
1 leaf lettuce (optional)

Steps:

  • 1. In large bowl, combine pasta, chicken, grapes, cucumber, green onions and half the orange sections.
  • 2. In small bowl, whisk together orange juice concentrate, oil, vinegar, salt and pepper. Pour over pasta mixture and toss gently to combine.
  • 3. Arrange lettuce on large platter. Mound pasta salad on top and garnish with remaining orange sections.
  • Note: I omit step 3 and prefer this salad quite cold so it goes into my fridge for at least an hour before serving. Served simply with fresh crusty rolls and butter.

2 c bow-tie pasta, uncooked
1/3 c poppyseed dressing
1/4 c real mayonnaise (regular or light)
4 green onions, sliced
1 c sliced fresh strawberries
1 can(s) mandarin oranges (11 oz) drained

Steps:

  • 1. Cook pasta as directed on package, omit salt. Drain. Cool
  • 2. Mix dressing and mayo in medium bowl. Add to pasta and onions; toss to coat.
  • 3. Gently stir in fruit. Refrigerate for 1 hour.
  • 4. NOTE: If wishing to prepare more than 1 hour in advance, combine dressing, mayo, cooked pasta and onions in large bowl. Combine oranges and strawberries in separate bowl. Refrigerate up to 8 hours. Add fruit to pasta mixture up to 1 hour before serving. Keep refrigerated.

12 watermelon balls
12 honey dew melon balls
12 cantaloupe balls
16 red grapes
1/2 cup hulled sliced strawberries
1/2 C peaches diced
1/2 C Pineapple, diced
1 small orange peeled, sectioned
1/4 Walnuts chopped
Orange juice vinaigrette (recipe follows)
1/3 C fresh mint leaves chopped
2/3 C orange juice
2 T mild olive oil
2 T Honey
2 t grated orange zest
1/2 t salt

Steps:

  • Prepare pasta to lighter side of package directions or til al dente. Rinse just to cool, drain well. Gently mix with fruit. Add walnuts and vinaigrette to taste. Toss with mint leaves Orange Vinaigrette (preferably fresh squeezed) Whisk orange juice, olive oil, honey, zest and salt until well blended. Pour over salad immediatly and toss to blend. Adjust seasoning and serve as side to grilled chicken, shrimp or with a brunch.

4 cups cooked macaroni or 4 cups other pastas
1/2 orange, zest and juice of
1 cup mayonnaise
1/2 onion, diced very fine
2 -4 tablespoons chopped fresh flat-leaf Italian parsley, to taste
1/2 red bell pepper, diced (optional)
2 scallions, diced (optional)
1 teaspoon garlic powder (optional)
1 teaspoon paprika (optional)
black pepper
1 dash salt

Steps:

  • Combine ingredients. Best with lots of black pepper, in my opinion.
  • Orange flavor will get stronger as it sits in the fridge. Zesting all the peel from the 1/2 orange will make the orange flavor rather strong, especially if you plan to refrigerate before serving.
  • If you don't have a zester, crosshatch an area of orange peel with light cuts from a sharp knife, then "shave" the pieces off. It's very easy and with heavy crosshatching yields results comparable to using a good zester.
