4 skinless, boneless chicken breast halves
Salt and pepper to taste
2 tablespoons butter, divided
1 small onion, chopped
3 tablespoons red wine vinegar
¼ cup orange juice
½ cup chicken broth
2 tablespoons cornstarch dissolved in
2 tablespoons water
1 cup fresh raspberries, rinsed and drained
1 orange, peeled and sectioned

Steps:

  • Season the chicken breasts to taste with salt and pepper. Melt 1 tablespoon of butter in a large skillet over medium heat. Sear, and cook until browned on both sides and the juices run clear, about 10 minutes. Remove chicken and keep warm.

6 boneless skinless chicken breasts
2 shallots, minced
1 garlic clove, minced
1/2 cup white wine
2 blood oranges (about 1/2 cup juice)
3 tablespoons seedless raspberry preserves
1 tablespoon soy sauce
1 teaspoon honey
1/2 teaspoon salt
1/2 teaspoon cayenne pepper, ground
