ORANGE RICE & SPICE BREAKFAST

Orange Rice & Spice Breakfast image

An interesting and flavorful change from oatmeal. This is sort of like a healthy breakfast version of rice pudding. This can be made much easier and faster by using 2 cups cooked brown rice. You could also use soymilk/powdered soymilk for the milk/milk powder. Cook time is for cooking rice, prep time is for heating the whole mixture, although heating time will be longer if you use cold leftover rice. Recipe is credited to Julie Delaplane of Anderson, Indiana and is from the La Leche League International Cookbook "Whole Foods for the Whole Family."

Tips:

  • Use fresh, high-quality oranges: The fresher the oranges, the more flavorful the rice will be.
  • Zest the oranges before juicing them: This will release the aromatic oils from the orange peel, which will add flavor to the rice.
  • Use a good quality basmati rice: Basmati rice is a long-grain rice that cooks up fluffy and separate, making it ideal for this dish.
  • Rinse the rice before cooking: This will remove any starch from the rice, which will help it cook evenly.
  • Cook the rice according to the package directions: Different brands of rice may have different cooking instructions, so be sure to follow the directions on the package.
  • Add the orange juice, zest, and spices to the rice after it has cooked: This will help to prevent the orange juice from curdling.
  • Serve the rice immediately: Orange rice is best served warm, so be sure to eat it as soon as it is cooked.

Conclusion:

Orange rice is a delicious and easy-to-make dish that is perfect for breakfast, lunch, or dinner. It is also a great way to use up leftover rice. With its bright citrus flavor and fluffy texture, orange rice is sure to be a hit with everyone who tries it. So next time you are looking for a new and exciting way to serve rice, give orange rice a try. You won't be disappointed!
