4 orange roughy fillets
1 egg
2 tablespoons honey mustard
3/4 cup seasoned bread crumbs
1 teaspoon cayenne pepper
3 teaspoons olive oil

  • mix egg and honey mustard in medium bowl.
  • mix bread crumbs and cayenne in large ziplock.
  • dip fillets in egg mixture then toss in bread crumb.
  • place in refrige for 1/2 hour so crumbs adhere.

2 cups sliced zucchini
1/2 cup thinly sliced onion
1 teaspoon dried oregano
1 tablespoon olive oil
4 orange roughy fillets (4 ounces each)
1/4 teaspoon salt
1/8 teaspoon pepper
1 medium tomato, chopped
1/2 cup shredded part-skim mozzarella cheese

1/2 cup extra virgin olive oil
2 teaspoons garlic chopped
3 pounds clams (Manila, cockles, or littlenecks)
1/2 white wine
1/2 teaspoon crushed red pepper, or more to taste
3 teaspoons ground fennel seeds
3 teaspoons lemon zest, finely chopped, yellow only
2 tablespoons lemon juice
1 1/2 cups tomatoes, cored, seeded, chopped into small pieces
1/4 cup parsley, chopped
