4 -6 pork chops, bone in (about 1/2-inch thick)
2 teaspoons vegetable oil, to taste
1 (11 ounce) can mandarin oranges, drained
1/2 teaspoon ground cloves
fresh ground pepper, to taste
salt, to taste

Steps:

  • In a large skillet, heat oil on medium heat and brown pork chops briefly on both sides (maye 1-2 minutes per side); Do not overcook at this point or they will get tough!
  • Pour oranges on top and sprinkle with cloves and some black pepper & salt to taste.
  • Cover and simmer over low heat until pork chops are cooked through (about 15 min for 4, 25-30 min for 6 ,approx).
  • Cooking time will vary depending upon the size and meatiness of your chops- check early for doneness.
  • Variation: You may substitute a different spice & fruit combo such as canned peach slices with allspice, apricots with nutmeg, pineapple with cloves.
  • You may also substitute skinless boneless chicken breasts for the pork, but the cooking time may be less as chicken dries out quickly.

When I fixed these pork chops for the first time, my husband-who has a hearty appetite for down-home cooking-commented, "You can make this anytime!" We have a 5-month-old son, and he's already showing signs he'll take after his dad in the eating department. Our daughters, 6 and 8 , help me with the cooking. So it's a good thing that I have a large recipe collection!

6 pork loin chops (1/2 inch thick)
1 tablespoon vegetable oil
3/4 cup water
1/2 teaspoon paprika
1/2 teaspoon pepper
1-1/4 teaspoons salt, divided
1 medium orange
1/2 cup sugar
1 tablespoon cornstarch
1/2 teaspoon ground cinnamon
12 whole cloves
1 cup fresh orange juice

Steps:

  • In a large skillet, brown chops in oil on both sides. Add water, paprika, pepper and 1 teaspoon salt; bring to a boil. Reduce heat to low; cover and simmer about 35 minutes, turning once. Meanwhile, grate peel from the stem end of the orange, then cut six slices from the other end. Set aside. In a saucepan over medium-high, combine 1 tablespoon peel, sugar, cornstarch, cinnamon, cloves and remaining salt. Stir in juice. Cook and stir until thickened. Add orange slices, cover and remove from the heat. To serve, top chops with sauce and orange slices.

2/3 cup orange marmalade
2 tablespoons butter, melted
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
2 tablespoons dried cherries or 2 tablespoons raisins
2 medium sweet potatoes, peeled and cut into 1/2 slices
3/4 cup Bisquick
1/4 teaspoon ground red pepper (cayenne)
4 (1/4 lb) boneless pork chop, 1/2 inch thick (about 1 pound)
2 tablespoons soy sauce or 2 tablespoons water

Steps:

  • Heat oven to 350.
  • Mix marmalade, butter, cinnamon and ginger in medium bowl.
  • Stir in cranberries (cherries/raisins) and sweet potatoes, set aside. I also add about 1 to 2 T. water to this mixture.
  • Mix Bisquick and red pepper.
  • Dip pork into soy sauce, then coat with Bisquick mixture.
  • Spray 10 inch skillet with cooking spray.
  • Heat over over medium-high heat.
  • Cook pork in skillet 6-8 minutes, turning once, until coating is brown.
  • Place pork in ungreased rectangular baking dish, 13x9x2 inches.
  • Arrange sweet potato mixture around pork - putting some of the mixture on top of each pork chop.
  • Bake uncovered 40 to 45 minutes or until sweet potatoes are tender and pork is cooked through.

¼ cup cider vinegar
1 tablespoon soy sauce
½ cup frozen orange juice concentrate, thawed
½ onion, shredded
1 teaspoon dried rosemary
1 teaspoon ground sage
2 teaspoons salt, or to taste
1 large clove garlic, crushed
½ cup barbeque sauce
4 thick cut pork chops

Steps:

  • In a mixing bowl, mix together vinegar, soy sauce, orange juice, onion, rosemary, sage, salt, garlic, and barbecue sauce. Place chops in a large resealable plastic bag. Pour in the marinade, and seal. Refrigerate for 6 to 8 hours, or overnight.

1 1/2 tablespoons five-spice powder
1 1/2 teaspoons ground coriander
Freshly ground black pepper
4 3/4-inch center-cut pork chops, bone in
2 tablespoons peanut or olive oil
1/4 cup white wine or sherry
1/2 to 3/4 cup chicken broth
Strips of zest from 1/2 orange
1 tablespoon grated ginger
2 cloves garlic, peeled, crushed and chopped

Steps:

  • Heat oven to 325 degrees. In a small bowl, combine salt, five-spice powder, coriander and black pepper. Put the pork chops in a large bowl, and sprinkle with the spice mixture, lightly coating the chops by patting and shaking them.
  • Place a large sauté pan over medium-high heat for 2 minutes. Add 1 tablespoon oil. Place pork chops in pan, and brown well on both sides. Pour off fat, then return pan to heat. Add wine, broth, orange zest, ginger and garlic. Bring to a boil, then cover pan and place in oven. Braise until tender, about 1 hour. Allow the chops to cool in the cooking liquid.
  • To serve, heat remaining 1 tablespoon oil in a large sauté pan. Add chops, and cook until reheated and browned, about 2 minutes a side. If desired, serve with polenta or risotto.
