ORANGE SURPRISE SWEET BREAD

Orange Surprise Sweet Bread image

I love using whole things in recipes like whole bags of chocolate chips or whole jars of jam. In this recipe, I use a whole orange! I look for one that feels heavy for its size and has a smooth skin as a pebbly surface means a thick skin and less fruit. The beauty of this quick bread is that it can be served with breakfast, brunch, lunch or dinner and even as dessert course. The batter can be divided into 1/4 cup portions to make muffins in a 375 degree oven.

Categories     Sweet Breads

Number Of Ingredients 13

1 tablespoon(s) approximately, vegetable shortening
2 tablespoon(s) approximately, corn flake crumbs (sold with the breadcrumbs)
1 - medium orange
1/4 cup(s) orange juice
3/4 cup(s) granulated sugar
1/2 cup(s) unsalted butter, softened to room temperature
1 - large egg
1/4 cup(s) milk
1 teaspoon(s) baking soda
1 teaspoon(s) baking powder
1/2 teaspoon(s) salt
2 cup(s) all-purpose flour
1/2 cup(s) golden raisins

Steps:

  • 1. Heat oven to 350 degrees. Generously grease a 9x5 loaf pan with shortening. Dust to coat with corn flake crumbs. Set aside
  • Cut off a sliver of the rind at the nub and the blossom end of the orange. Cut the orange into 8 pieces, removing any seeds. Place in a food processor fitted with the steel blade. Add the orange juice and pulse until the orange is finely chopped.
  • In a mixing bowl, cream the sugar and butter.
  • Beat in the orange puree, egg, milk, baking soda, baking powder and salt.
  • Stir in the flour.
  • Fold in the raisins.
  • Scoop the batter by the spoonful into the prepared pan. Use the back of the spoon to level the batter.
  • Bake for 1 hour or until baked through.
  • Cool in the pan until the sides shrink away. Remove to a wire rack and continue cooling to room temperature.
  • Serve slices just as they are or with a smear of cream cheese or butter.

Tips:

  • Mise en place: Before starting, measure and prepare all ingredients and equipment. This will help ensure accuracy and a smooth baking process.
  • Properly measure ingredients: Use measuring cups and spoons to ensure accurate measurements. Incorrect measurements can affect the final product's texture and flavor.
  • Use fresh oranges: Fresh oranges provide the best flavor and aroma. If using store-bought orange juice, choose 100% pure and not from concentrate.
  • Zest the oranges finely: Finely zesting the oranges will help release their aromatic oils and distribute the flavor evenly throughout the bread.
  • Don't overmix the batter: Overmixing can result in a dense, tough bread. Mix just until the ingredients are combined.
  • Proper baking temperature: Preheat the oven to the correct temperature before baking. This ensures even baking and prevents the bread from overcooking.
  • Check for doneness: Insert a toothpick or skewer into the center of the bread. If it comes out clean, the bread is done. Avoid overbaking, as it can dry out the bread.
  • Let the bread cool: Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely. This prevents the bread from becoming soggy.

Conclusion:

The Orange Surprise Sweet Bread is an easy-to-make, flavorful, and moist bread that combines the refreshing taste of oranges with the warmth of spices. Its tender crumb and sweet orange glaze make it a perfect treat for breakfast, brunch, or as an afternoon snack. This recipe is also versatile, allowing for variations such as adding chopped nuts, dried fruits, or even a cream cheese filling. With its delightful citrus flavor and beautiful presentation, the Orange Surprise Sweet Bread is sure to impress your family and friends.
