1/8 teaspoon crushed saffron thread
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup sugar
1 large egg
1 large egg white
1/4 cup plain low-fat yogurt
6 tablespoons olive oil
cooking spray
3 tablespoons orange marmalade
1 tablespoon Grand Marnier or 1 tablespoon other orange-flavored liqueur

Steps:

  • Preheat oven to 350°.
  • Place the juice in a small saucepan; bring to a simmer over medium-high heat. Remove from heat; stir in saffron. Let stand 10 minutes.

2 1/2 cups unbleached white flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
3 eggs

3/4 cup melted butter
2 teaspoons orange rind, grated
1 teaspoon vanilla
1 cup plain low-fat yogurt
1/2 cup orange juice (I use fresh-squeezed)
1 cup sugar
1/2 cup water
1/2 cup orange juice
1 cinnamon stick
2 -3 pieces orange peel

Steps:

  • Preheat the oven to 350°F Butter and flour a 9x13 cake pan.
  • Combine the dry ingredients (the first five listed).
  • Beat together the eggs and sugar until foamy. Add the butter, grated orange peel, and vanilla.
