COPYCAT SUBWAY® ORCHARD CHICKEN SALAD SUB
I found this recipe when I was looking for this recipe or one close to it. I tried this at Subway and really liked it. Subway always uses light Mayo. In this recipe the salt and pepper are optional. Use more or less mayo to suit your own taste and the same with the fruits. I like to add a few more fruits. There is no cook time unless you are cooking your chicken for this recipe. I use left over or canned.

SUBWAY ORCHARD CHICKEN SALAD
Steps:
- Chop both apples into small cubes, and place into a bowl. Sprinkle over 1 tablespoon of lemon juice over apples, this will help them from turning brown. Add chopped chicken, chopped celery, and craisins. Mix well. Add 1 cup of light mayonnaise, and stir well. Depending on how the salad is coated, you may want to add an additional 1/2 cup of light mayonnaise. Season with salt and pepper. Allow flavors to marry in the refrigerator in a covered container for about an hour before serving.
Tips:
- Choose fresh, ripe fruits for the best flavor and texture.
- If using canned fruit, be sure to drain it well and rinse it before using.
- Add a variety of nuts and seeds for extra crunch and flavor.
- Use a light dressing, such as a vinaigrette or yogurt-based dressing, to avoid overpowering the delicate flavors of the fruit.
- Serve the salad immediately after making it, or the fruit will start to brown.
