ORIENTAL RAMEN COLE SLAW SALAD

This is an excellent recipe I got from my grandmother who has been making this for years. It's always a hit, especially at potlucks. Even my husband likes it and he isnt a cole slaw eater! Instead of sunflower seeds cashews can be added as a variation.

Time 6h20m

Yield 10 serving(s)

Number Of Ingredients 8

1 (16 ounce) package broccoli coleslaw mix
1 (2 1/4 ounce) package slivered almonds
3/4 cup green onion, diced
1 (3 ounce) package ramen noodles
1/2 cup vegetable oil
2 tablespoons vinegar
1 teaspoon salt
3 tablespoons sugar

Steps:

  • Before serving, mix dressing ingredients in a container with a lid and shake vigorously.Brown silvered almonds in a skillet, using 2 tablespoons of oil. Crush Ramen Noodles in a plastic baggie in small pieces. Discard seasoning packet. Mix all ingredients together when ready to serve. I usually add the dressing and soup noodles right before.

Tips:

  • Use a sharp knife or mandoline to thinly slice the cabbage and carrots. This will help the slaw to be light and airy.
  • If you don't have a mandoline, you can use a food processor fitted with a slicing blade. Just be careful not to over-process the vegetables, or they will become mushy.
  • To save time, you can buy pre-shredded cabbage and carrots. However, be sure to rinse them well before using, as they may contain harmful bacteria.
  • Add some chopped fresh herbs, such as cilantro, parsley, or basil, to the slaw for extra flavor and color.
  • If you like a spicy slaw, add a pinch of red pepper flakes or a drizzle of Sriracha sauce.
  • For a sweeter slaw, add a tablespoon or two of honey or maple syrup.
  • Serve the slaw immediately, or store it in the refrigerator for up to 2 days.

Conclusion:

Oriental slaw is a delicious and versatile side dish that can be enjoyed with a variety of meals. It is light, refreshing, and packed with flavor. With its crunchy vegetables and tangy dressing, oriental slaw is sure to be a hit at your next potluck or barbecue.
