This dish looks beautiful and tastes like you cooked all day. Any combination of green, yellow, and red peppers works well; I use all three for color. You can also use low-sodium chicken broth and Smart Balance® spread.

Tips:

  • Choose the right peppers: Look for bell peppers that are firm, brightly colored, and have smooth skin. Avoid peppers that are bruised or have blemishes.
  • Prepare the peppers properly: Cut the peppers in half lengthwise and remove the seeds and ribs. Rinse the peppers thoroughly and pat them dry.
  • Cook the orzo al dente: Orzo should be cooked al dente, or slightly firm to the bite. This will help it hold its shape when it is stuffed into the peppers.
  • Season the chicken and orzo well: Use a generous amount of salt and pepper to season the chicken and orzo. You can also add other herbs and spices, such as garlic powder, onion powder, or paprika, to taste.
  • Stuff the peppers evenly: Divide the orzo and chicken mixture evenly among the pepper halves. Do not overstuff the peppers, or they will be difficult to close.
  • Bake the peppers until tender: Bake the stuffed peppers in a preheated oven until the peppers are tender and the chicken is cooked through. This usually takes about 30 minutes.
  • Serve the peppers hot: Serve the stuffed peppers hot, topped with additional sauce, cheese, or herbs, if desired.
