1 pound sugar snap peas, trimmed and halved crosswise
2 small yellow squash, halved lengthwise and cut crosswise into 1/2-inch pieces
3 tablespoons fresh lemon juice
2 tablespoons olive oil
2 tablespoons finely grated Parmesan cheese
Coarse salt and ground pepper

Steps:

  • In a large pot of boiling salted water, cook orzo 5 minutes. Add sugar snap peas and squash. Cook until orzo is al dente and vegetables are crisp-tender, about 3 minutes. Drain well; return to pot.
  • Add lemon juice, olive oil, and Parmesan. Season generously with salt and pepper. Toss to combine.

1 1/2 teaspoons salt
1/2 pound sugar snap peas, trimmed and cut diagonally into 1/2-inch pieces
3 scallions, chopped
2 tablespoons chopped fresh dill
1 1/3 cups orzo (1/2 pound)
1/4 teaspoon black pepper

Steps:

  • Bring water, broth, and 1 teaspoon salt to a boil and blanch sugar snaps 1 minute. Transfer sugar snaps with a slotted spoon to a bowl of cold water to stop cooking, reserving broth, then drain sugar snaps in a colander. Put sugar snaps, scallions, and dill in a bowl.

1 garlic clove, crushed with a garlic press

3 green onions, thinly sliced, including green portions
1 red bell pepper, seeded, stemmed and cut into 1/2-inch squares
10 ounces orzo pasta
1 cup frozen peas
