I got this recipe from a former coworker, whose father, a professional cook, made this for every family get-together and holiday. When he passed away, she took on the responsibility for providing this tasty treat for her family.

1 lb ground beef
1 lb hot bulk pork sausage
2 cups long grain rice, uncooked
2 (10 3/4 ounce) cans condensed cream of mushroom soup (cream of celery or cream of onion soup may be substituted)
1 3/4 cups water
1 cup green pepper, finely chopped
1 cup onion, finely chopped
salt and pepper, to taste

Steps:

  • Pinch all the ingredients together, with your fingers, in a large casserole dish.
  • Spread it all out into an even layer and bake, covered with foil, in a 350°F oven for 30 minutes.
  • After 30 minutes, remove the dish from the oven and stir/smoosh (breaking up the pieces of sausage and beef into itty-bitty tiny bits) and add a little more water if it looks dry.
  • Bake, uncovered, for an additional 30 minutes.

1 1/2 lbs ground beef
1 1/2 lbs bulk pork sausage, mild
1 onion, chopped
1/2 green bell pepper, chopped
1 celery rib, chopped
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can cream of celery soup
1 (10 1/2 ounce) can cream of chicken soup
1 1/2 cups long-grain rice, uncooked (I use Uncle Ben's)

Steps:

  • In a large skillet, brown ground beef and sausage; drain off excess fat.
  • Add onion, bell pepper and celery and saute until tender.
  • Add cream of mushroom, celery and chicken soup and rice; mix well.
  • Pour into greased large oblong baking dish.
  • Cover tightly with foil.
  • Bake at 325 degrees for 1 1/2 hours.

2 ½ cups long-grain rice
2 teaspoons butter, or more to taste
¼ pound ground beef
¼ pound bulk country sausage
¼ pound chicken livers, minced
½ cup diced onion
⅓ cup diced celery
¼ cup diced green bell pepper
2 cloves minced garlic
2 ½ cups chicken stock
2 ½ cups water
2 tablespoons chopped fresh parsley, or more to taste
2 tablespoons Cajun seasoning
2 large bay leaves
1 teaspoon sea salt
1 teaspoon ground black pepper
1 teaspoon ground thyme
1 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Rinse rice in a wire mesh strainer until water runs clear. Drain and set aside.
  • Melt butter in a large, oven-proof casserole over medium-high heat. Add ground beef, country sausage, and chicken livers; cook and stir until browned, 5 to 7 minutes. Drain, leaving a little grease in the casserole.
