1/4 cup sweet paprika
1 tablespoon onion powder
Kosher salt and freshly ground black pepper
2 teaspoons dry oregano
2 teaspoons garlic powder
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
6 pounds short-ribs, flanken-cut (about 6 ribs bone-in, cut into 5 to 6-inch strips)
1/2 cup honey

Steps:

  • Heat the oven to 300 degrees F.
  • In a small bowl, combine the paprika, onion powder, 4 teaspoons salt, oregano, garlic powder, cumin, cayenne pepper and a few grinds of black pepper. Rub the mixture all over the ribs and allow it to sit at room temperature for 1 to 2 hours at the most.
  • Place the ribs snugly in an oven dish with the fat side of each rib facing up. Cover tightly with aluminum foil and don't be afraid to top the dish with another heavy dish to ensure the seal! Cook in the oven for 2 1/2 hours, at this point the meat should be falling off the bones. Remove the ribs from the oven and raise the temperature to 425 degrees F.
  • Using a pair of tongs, flip and move the beef around a bit. Drizzle the honey evenly over the top of each rib. Place the ribs back in the oven, this time leaving it uncovered and cook another 10 to 15 minutes.

3 lbs pork back ribs
1 (8 ounce) jar honey
1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon garlic powder
2 tablespoons Old Bay Seasoning
1/2 teaspoon onion powder
1/4 teaspoon celery salt
1/2 cup dark brown sugar
1/4 teaspoon fresh ground pepper
1 medium onion, grated or finely chopped
12 ounces barbecue sauce
1/4 cup white sugar

Steps:

  • Place all ingredients together in large roasting pan (i use bottom of turkey roaster).
  • Cut ribs apart for easier serving.
  • Mix together making sure to coat all ribs with this semi-dry paste.
  • Spread ribs out evenly on bottom of pan.
  • cover lightly with foil.
  • Bake at 375 degrees for approximately 1 hour.
  • Turning or stirring occasionally.
  • You can use broiler for these ribs, just watch more closely, and adjust cooking time.

3 Tbsp olive oil

1 lb hickory smoked bacon
BBQ SAUCE
12 oz sweet baby rays original bbq sauce
1/2 c zesty italian dressing
1/4 c brown sugar
2 Tbsp worchestire sauce

Steps:

  • 1. Lightly coat ribs with olive oil. Salt and Pepper Ribs to your liking. Wrap individual ribs with bacon, making sure that most of the rib is covered. Secure bacon with toothpicks. In a separate bowl, combine ingredients for sauce. Spoon enough sauce into a 9x13 glass baking dish to give the ribs a thin bed to rest on. Place Ribs in dish. Pour remaining BBQ sauce over Ribs. Cover, bake at 350 for 35 minutes..after 35 minutes are up, remove cover and bake for remaining 15.

2 cups sliced onions
2 cups ketchup
2 cups water
4 teaspoons salt
¼ cup Worcestershire sauce
½ cup white vinegar
½ cup dark brown sugar
4 teaspoons dry mustard
4 pounds pork spareribs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine onions, ketchup, water, salt, Worcestershire sauce, vinegar, brown sugar, and mustard. Split ribs down the center between the bones.
  • Heat a large lightly oiled skillet over medium-high heat. Add ribs and sear until browned. This may have to be done in several batches.
  • Place ribs in a single layer in two baking pans or casserole dishes. Pour half of the sauce over the ribs, reserve remainder.

1/2 cup light brown sugar
2 tablespoons Spanish paprika
2 tablespoons kosher salt
1 tablespoon chile powder
2 teaspoons ground cumin
2 teaspoons garlic powder
1/2 teaspoon ground cinnamon
2 racks (4 to 5 pounds each) pork spareribs
1 (15-ounce) can tomato puree
1 cup molasses
1/2 cup apple cider vinegar
2 tablespoons Worcestershire sauce
4 cloves garlic, grated

Steps:

  • For the ribs: Preheat the oven to 275 degrees F.
  • Line a baking sheet with foil, enough to fold over the ribs, approximately twice the size of the baking sheet.
  • In a small mixing bowl, combine the sugar, paprika, salt, chile powder, cumin, garlic powder and cinnamon. Reserve 1 tablespoon of the rub and set aside.
  • Place the ribs on the prepared baking sheet. Generously sprinkle the ribs on both sides with the spice mixture. Really rub it in! Place the ribs meat-side down and fold the foil tightly around the ribs to make a sealed packet. Bake the ribs until they become pliable but not falling apart, 2 to 2 1/2 hours. You know the ribs are done when the meat pulls away from the bone. Once the ribs are tender, carefully pour off 1/2 cup of the accumulated juices into a bowl and reserve. Keep the ribs wrapped in the foil to keep warm.
  • For the sauce: In a small saucepan, combine the tomato puree, molasses, vinegar, Worcestershire sauce, reserved rub and the garlic. Add 1/2 cup of the reserved cooking juices and bring the sauce to a boil. Reduce the heat and simmer until the sauce thickens and coats the back of a spoon, about 10 minutes.
  • Preheat a grill pan over high heat. Just before serving, slather the ribs with the tangy BBQ sauce and char them on the grill pan, basting them with the sauce and turning as they char up. (If you don't have a grill pan, you can slather them with sauce and stick them under the broiler to char.) Serve the ribs with extra BBQ sauce on the side.

Folks in St. Louis pride themselves on their ribs. You could say it's the city's signature dish. Growing up in the projects like we did, we didn't have a barbecue pit or a smoker, so when we wanted ribs, my mom came up with this way of doing them in the oven. Another way she'd make her ribs was to cut the rack into small slabs of two or three ribs, marinate and season them, and then fry them up-just like you'd do a pork chop. Serve with potato salad or mac and cheese.

2 to 4 pounds boneless pork ribs (you could also use beef)
1 cup pineapple juice, unsweetened
2 teaspoons salt
1 teaspoon ground black pepper
2 teaspoons sugar

About 1 1/2 cups water
1 cup Barbecue Sauce

Steps:

  • 1. Preheat the oven to 250°F.
  • 2. Wash the ribs under cold running water and pat them dry.
  • 3. Put the ribs in a large deep dish and pour the pineapple juice over it. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight.

1 c tomato ketchup
1 c apple cider divided
2 tsp yellow mustard
1 tsp garlic salt
1/2 tsp ground black pepper

1/4 tsp cayenne pepper( add more for extra spicy sauce)
1 tsp worcestershire sauce
2 tsp dark molasses
1/2 c brown sugar
2 Tbsp honey
1 c chopped onion ( i used a sweet onion)
1 c finely chopped apple
2 clove minced garlic
6 oz can tomato paste
RIBS
21/4 c apple cider
2 c apple bbq sauce
1-2 racks of baby back or spare ribs
1/4 tsp black pepper
1/2 tsp garlic powder

Steps:

  • 1. Chop Apple and onion. Fry onion on medium high heat in oil. Cook until starting to caramelize. Add in chopped Apple and 1/4 cup Apple cider. Cook on medium stirring occasionally, until apples are softened, and cider cooks off. Add in the garlic. Cook for a minutes stirring. Remove from heat.
  • 2. Place apples and onions in a food processor with 1/4 cup Apple cider. ( if needed add a bit more cider if it doesn't blend. Blend until it is a sauce consistency. Add mixture to a sauce pan. Add 1/2 cup of cider And remaining ingredients except for tomato paste.
  • 3. Stir occasionally and cook over medium heat for about 3o minutes. Add paste. Stir well and cook additional 10 minutes. Remove from heat. ( store in fridge or use right away)
  • 4. Ribs Heat oven to 325 degree's Foil line a sheet pan. Turn rack of ribs over. Pull skin off the back. I insert a knife under the skin on one side separating it from meat. Grasp skin with paper towel and peel off.
  • 5. Place 2 cups of Apple cider in foil lined pan. Stir in 1/2 cup of sauce. Place ribs on top of cider bone side down. Sprinkle with garlic powder and black pepper. Spread 1 cup of sauce on top. Cover tightly with foil. Place in oven and bake 2-3 hours, or until ribs are almost falling off the bone.
  • 6. Remove from oven. Heat oven to broil. Drain off liquid from pan. Baste top of ribs with sauce. Place back in oven on broil. Broil until sauce is a little sticky and lightly browned. About 5 minutes. Cut up and serve.

SUPER EASY OVEN BBQ RIBS

  • 1. Using a knife, slice into the membrane on the back of the ribs (the white part) and use your hand and a paper towel to pull it off. Place entire rack of ribs in center of a LARGE foil and brush with BBQ sauce on both sides. Wrap well in foil to seal and place on baking sheet.

2 kg beef spare ribs (4.4 lbs)
3/4 c soy sauce
6 Tbsp brown sugar
1/4 c rice wine (mirin)
20 g red apple or asian pear (about 8 oz)
180 g onion (about 6 oz)
2 Tbsp minced ginger
1/4 tsp ground black pepper

Steps:

  • 1. Mix all ingredients except ribs to make marinade.
  • 2. Pour the marinade over the meat and make sure it's reaching all parts of the meat. Cover the meat and transfer it to the fridge. Marinate the meat for at least 4 hrs (but ideally for 24 hrs for optimal results).
  • 3. Preheat the oven on 100 C/212 F (on fan forced setting) for 20 minutes.
  • 4. Lay down some waxed baking paper (or aluminum foil) on a baking sheet (or roasting pan). Then place the marinated rack of ribs. Splash some marinade around the ribs but discard most of sauce.
  • 5. Cook it for 8 hrs.
  • 6. Take the meat out and carve. Serve.

1 (12 fluid ounce) can or bottle beer
1 ½ cups water
1 tablespoon salt
3 tablespoons vegetable oil
5 pounds pork spareribs
1 tablespoon butter
1 cup thinly sliced onions
2 cloves garlic, pressed
2 (8 ounce) cans diced tomatoes with juice
1 cup ketchup
3 tablespoons molasses
1 tablespoon Worcestershire sauce
1 tablespoon prepared mustard
¼ teaspoon salt
½ tablespoon hot pepper sauce
1 tablespoon white vinegar
½ lemon, sliced into rounds

Steps:

  • Pour beer and water into a large stock pot. Add salt and stir to dissolve. Bring mixture to a boil over medium high heat.
  • In a large skillet or frying pan, heat vegetable oil over high heat. Sear ribs on both sides. Place on paper towels to briefly drain. Add seared ribs to the beer/water mixture. Add more water as needed to cover the ribs. Cover pot and simmer for 2 hours.
  • While the ribs are simmering, melt the butter in a sauce pan and saute the onions and garlic until onions are translucent. Stir in tomatoes, ketchup, molasses, Worcestershire, mustard, salt, hot pepper sauce and vinegar. Bring to a slow boil, stirring constantly. Reduce heat to low and leave it simmering until the ribs are finished.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Drain ribs and arrange them in a shallow roasting pan, or pans. Ladle the sauce over the ribs evenly, slice each slice of lemon in half, and distribute the half slices on top of the sauce. Cover with foil loosely, and place in the oven for 15 minutes, and then uncover for the last 10, a total of 25 minutes oven time. Remove rind from lemon slices, discard rind, returning lemon "meat" to sauce on top of the ribs, and serve ribs covering each with sauce on the plate.

  • 1. Preheat oven to 300 degrees f.
  • 2. Peel off tough membrane that covers the bony side of the ribs.
  • 3. Mix together the sugar and spices to make the rub.
  • 4. Apply rub to ribs on all sides.
  • 5. Lay ribs on two layers of foil, shiny side out and meaty side down.
  • 6. Lay two layers of foil on top of ribs and roll and crimp edges tightly, edges facing up to seal.

  • 8. Remove from oven.
  • 9. Heat broiler.
  • 10. Cut ribs into serving sized portions of 2 or 3 ribs.

  • 14. Repeat on other side.
  • 15. Alternately, you can grill the ribs on your grill to cook on the sauce.

TENDER OVEN PORK RIBS WITH MY BBQ SAUCE

1 slab of pork ribs
1-2 Tbsp olive oil
2-3 Tbsp grill mate smokey rub
1 medium yellow onion, quartered
EASY BBQ SAUCE
1 bottle baby rays sauce (use your favorite)
1 bottle chili sauce
1/2 c welch's grape jam

Steps:

  • 1. Heat oven to 350. Line a large cookie sheet with 2 layers of aluminum foil slightly larger than the cookie sheet.
  • 2. Place quartered onion down first on foil. Rub the slab of ribs with olive oil and pack on the smoky rub on both sides. Lay them on the onions.
  • 3. Mix up in a medium bowl the bbq sauce, chili sauce, and jam thoroughly. Pour over the ribs and fold foil tightly to seal. Bake at 350 for 3 hours. then remove from oven and open foil carefully (watch the steam) and lay the foil slightly back and spoon the sauce up on the ribs until covered then leave the foil open and put back into oven for 1 more hour, turn oven down to 300. These ribs should slice very easily. Spoon more on sauce as you serve.
