BAKED FISH NUGGETS

Baked Fish Nuggets image

I had five pieces of IQF tilapia defrosted tonight, but no inspiration on how to prepare them. I happened to look in the freezer and see a bag of tater tots. "Finger foods sounds good" I thought. So I tweaked a recipe from a Cooking Light cookbook into this recipe. My kids loved it. They ate them with ketchup while I prefered tartar sauce. We all also had tater tots and applesauce.

Number Of Ingredients 7

5 pieces tilapia fillets, defrosted
1/2 cup skim milk
3/4 cup fresh breadcrumb
3/4 cup cornmeal
1 teaspoon ground pepper
cooking spray

Steps:

  • Turn the oven up to 425 degrees.
  • Cut the tilapia into slices about one inch thick. (I cut mine on the short side because my kids are small and like small nuggets.).
  • Put the tilapia in a bowl and add the milk. Stir well.
  • In a large ziploc type bag add the toasted bread crumbs, cornmeal, and pepper.
  • Using a slotted spoon, remove the fish from the milk and put the pieces into the bag. Seal it and then shake it up so all the pieces are coated.

  • Place the nuggets on the baking sheet. Sprinkle the tops with salt.
  • Bake until the fish flakes easily with a fork, 15-25 minutes.

OVEN FRIED CATFISH NUGGETS

Oven Fried Catfish Nuggets image

Want the crunch of deep fried without the fat, give these crispy nuggets a try. Use any fish you wish (cod, bass, etc.)

Provided by Luvs 2 Cook

Categories     Catfish

Time 30m

Yield 4 serving(s)

Number Of Ingredients 6

1/3 cup seasoned bread crumbs
1/3 cup crushed corn flakes
3 teaspoons grated parmesan cheese
1/2 teaspoon cajun seasoning
1 1/2 lbs catfish fillets, cut into 1 inch cubes
butter-flavored nonstick cooking spray

Steps:

  • Combine bread crumbs, cornflakes, Parmesan Cheese, and Cajun seasoning in a bowl.
  • Coat fish with butter - flavored nonstick cooking spray, then roll in crumb mixture.
  • Place on baking sheet coated with nonstick cooking spray.
  • Bake at 375°F for 15 to 20 minutes or until fish flakes easily with a fork.

Tips:

  • Use a light-colored cooking oil with a high smoke point. This will help prevent the oil from burning and smoking, which can ruin the flavor of the fish nuggets.
  • Make sure the oil is hot enough before adding the fish nuggets. The ideal temperature for frying fish nuggets is between 350°F and 375°F. If the oil is not hot enough, the fish nuggets will absorb too much oil and become greasy.
  • Don't overcrowd the pan. Frying too many fish nuggets at once will cause the oil temperature to drop, which will result in greasy fish nuggets.
  • Cook the fish nuggets until they are golden brown and crispy. This will ensure that they are cooked through and have a delicious flavor.
  • Drain the fish nuggets on paper towels before serving. This will help to remove any excess oil.

Conclusion:

Oven-fried fish nuggets are a delicious and easy-to-make meal that can be enjoyed by people of all ages. They are perfect for a quick and easy weeknight dinner or a fun weekend lunch. Serve them with your favorite dipping sauce and enjoy!
