When we first got married my husband wouldn't go near sweet potatoes. Now he asks me to specifically make these for him.

4 medium sweet potatoes
1 tablespoon canola oil
1/2 teaspoon coarse black pepper
1/4 teaspoon kosher salt
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
2 -3 cloves garlic, minced

Steps:

  • Cut the potatoes into thin wedges.
  • Pile them in a bowl and cover them with cold water.
  • Let rest 15 minutes.
  • Preheat oven to 375 degrees F.
  • Coat a baking sheet with vegetable spray.
  • Set aside.
  • Drain the potatoes and dry them with paper towels.
  • Press the potatoes with paper towels to remove all water.
  • Transfer the potatoes to a large bowl.
  • Sprinkle the potatoes with oil, tossing the potatoes to disburse it.
  • Then sprinkle with pepper, salt, paprika and cayenne pepper.
  • Bake the potatoes at 375 degrees F for 20 minutes.
  • Turn over the potatoes.

1 large dark-orange sweet potato (1 lb), peeled, cut crosswise in half, then cut into 3x3/4-inch wedges
1 tablespoon canola or olive oil
1/8 teaspoon crushed red pepper flakes

Steps:

  • Heat oven to 400°F. Line 15x10x1- inch pan with foil; spray foil with cooking spray.
  • In small bowl, mix bread crumbs, salt, garlic powder and ginger. In large bowl, toss potato wedges, oil and pepper flakes. Add crumb mixture; toss to coat.
  • Spread potatoes in single layer in pan; sprinkle any remaining crumb mixture on potatoes.

2 sweet potatoes, washed and peeled
2 Tbsp canola oil
1/2 tsp kosher salt
1/4 tsp ground ginger
1/4 tsp garlic powder
1/4 tsp onion powder
SRIRACHA MAYONNAISE
1/2 c low fat mayonnaise
1 1/2 Tbsp sriracha sauce
1 scallion, chopped
1/2 tsp horseradish

Steps:

  • 1. Pre heat oven to 400 degrees. Wash and peel sweet potatoes. I like to leave some of the unblemished skin on. Halve potatoes and slice into wedges. I try and get 12 slices per potato.
  • 2. In medium size bowl, mix together canola oil and dry spices. Add sliced potatoes and coat with oil mixture. Place on foil or parchment lined baking sheet and bake 20 minutes. Turn potatoes over and cook another 15 minutes or until potatoes are cooked.
  • 3. While potatoes are cooking, prepare the dipping sauce. Combine all ingredients (from mayo to horseradish) and when potatoes are done, get ready to dip away.

1 Tbsp water
1/3 c dry bread crumbs
2 Tbsp grated parmesan cheese
1/4 tsp cayenne pepper
1/4 tsp pepper
1 large sweet potato (14 oz) peeled
2 Tbsp olive oil
MANGO CHUTNEY MAYONNAISE (OPTIONAL)
1/4 c mayonnaise
2 Tbsp mango chutney
1/4 tsp curry powder
dash of salt

Steps:

  • 1. In a shallow bowl, whisk egg and water. In a resealable plastic bag, combine the bread crumbs, Parmesan cheese, cayenne and pepper.
  • 2. Cut potato into 1/4-inch strips. Add to egg mixture, a few at a time and toss to coat. Add to the crumb mixture, a few at a time; seal bag and shake to coat.
  • 3. Arrange potato strips in a single layer on a baking sheet coated with non-stick cooking spray; drizzle with oil.
  • 4. Bake at 450 degrees for 25-30 minutes or until golden brown.
