OVEN ROASTED BBQ CHICKEN
A recipe from a church cookbook I inherited from my GreatAunt Alta. The cookbook is dated 1963 as is from the St John's Luthern Church in Summit, NJ. The recipe suggests a combination of both bone-in breasts & legs with thighs attached.

Steps:
- Heat oil in a deep 12" size skillet- you will need more or less as needed to brown chicken.
- Place chicken in the hot oil and brown on all sides, then remove to a paper towel lined plate to drain excess grease.
- You may need to do this in batches, depending upon pan size.
- Meanwhile, preheat oven to 325 F and have ready a roasting pan greased lightly with oil; place browned chicken pieces in pan.
- Combine remaining ingredients and pour over the chicken.
- Bake for 1 hour or until chicken is fully cooked and juices run clear with chicken is pierced, basting occasionally with the pan juices.

- 1. Preheat oven to 325 . Remove insides of chicken and discard. Cut onion in half and stuff inside chicken.
- 2. Mix all dry seasonings in a bowl. Loosen skin and put seasoning under skin in breast area , as best as you can. Sprinkle the rest over entire chicken , covering really good. Inject chicken with Jalapeno Butter , get as much as you can in chicken. THROW AWAY ANY LEFTOVER JALAPENO BUTTER AND THE INJECTOR .
- 3. Spray dish with cooking spray . Put chicken (breast side up ) in covered dish . Cook for about 1 hour , remove lid and add BBQ sauce . Put lid back on and return to oven and cook 1 hour more....remove lid and cook 15 minutes .
Tips:
- Choose the right chicken: Look for a whole chicken that is around 3-4 pounds. Make sure the chicken is fresh and has no blemishes.
- Prep the chicken: Rinse the chicken inside and out with cold water. Pat the chicken dry with paper towels.
- Make the BBQ sauce: Combine all of the BBQ sauce ingredients in a bowl and stir until well combined. Set aside.
- Season the chicken: Sprinkle the chicken with salt, pepper, and garlic powder. Rub the BBQ sauce all over the chicken, making sure to get it into all the nooks and crannies.
- Roast the chicken: Place the chicken in a roasting pan and cook at 375 degrees Fahrenheit for 1 hour and 15 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
- Let the chicken rest: Once the chicken is cooked, remove it from the oven and let it rest for 10 minutes before carving.
