I am a huge pasta fan! I try to make pasta dishes as healthy as possible because we all know that eating too much pasta is not good for our weight. This is a very easy spaghetti recipe. You'll love how all the flavors blend in together. The wine's pleasant aroma and the mushrooms' meaty texture are two things that I love most about this recipe. Enjoy!

Time 1h45m

Yield 8 appetizer servings or 4 main servings

Number Of Ingredients 13

2 chicken drumsticks and 2 thighs
Salt and freshly ground black pepper
1/4 cup olive oil
4 cloves garlic, thinly sliced
2 carrots, peeled and diced
1 onion, peeled and diced
8 ounces oyster mushrooms, cleaned and coarsely chopped
1 10-ounce can San Marzano tomatoes (and juices), crushed by hand
1 bay leaf
1/2 cup chicken stock or water
1 pound torchio, campanelle or other torch or bell-shaped pasta
Grated pecorino Sardo, for garnish
Chopped fresh oregano, for garnis

Steps:

  • Preheat oven to 350 degrees. Pat chicken dry with paper towels, season liberally with salt and pepper, and set aside. Place a Dutch oven over medium heat and add olive oil. When oil shimmers, add chicken and brown well on both sides.
  • Remove chicken from pan and set aside. Add garlic and allow to brown slightly (15 to 30 seconds) then add carrots, onion and mushrooms. Sauté until onions are lightly browned, 10 to 15 minutes.
  • Add tomatoes, bay leaf and chicken stock. Bring back to a simmer and nestle chicken leg quarters into tomato sauce, spooning some sauce on top. Cover and transfer to oven to braise until chicken pulls easily away from bone, 45 minutes to 1 hour.
  • Transfer chicken to a plate and allow to cool; keep tomato sauce warm. Meanwhile bring 6 quarts of lightly salted water to a boil. Pick cooled chicken meat from bone and return to tomato sauce.
  • Cook torchio in salted boiling water until al dente, about 10 minutes. Drain well and add to chicken mixture. Serve garnished with grated pecorino Sardo and fresh oregano.

SPAGHETTI WITH FRESH TOMATO AND BASIL SAUCE

Spaghetti With Fresh Tomato and Basil Sauce image

This recipe came to The Times in 2003 from the chef Scott Conant, who was then cooking at his restaurant L'Impero in Manhattan. It is simple, classic Italian fare that makes the most of summer's tomatoes, but you can also make it with hothouse offerings and it will be delicious.

Provided by The New York Times

Categories     dinner, weekday, pastas, main course

Time 40m

Yield 4 servings

Number Of Ingredients 9

3 pounds fresh plum tomatoes, blanched, peeled, seeded and quartered
3 ounces olive oil
Salt and freshly ground pepper to taste
1 pinch crushed red-pepper flakes
1 pound dry spaghetti
2 ounces extra-virgin olive oil
1 tablespoon butter
6 leaves fresh basil, shredded
2 tablespoons freshly grated Parmigiano-Reggiano cheese

Steps:

  • Blanch the tomatoes and remove the skins. Cut in half lengthwise and scoop out the seeds. Cut the tomatoes crosswise. Set aside in a bowl.
  • Heat 3 ounces olive oil in a large, deep skillet over medium-high heat until it smokes slightly. Add tomatoes, salt, pepper and crushed red pepper. Since the tomatoes will reduce and the salt will be concentrated, it is better to season initially with a lighter hand.
  • Chop the tomatoes with a potato masher until they are in fine chunks and all their liquid is released. Be sure they are chopped and crushed fine, for a semichunky sauce. Simmer for 25 minutes over medium heat.
  • While the sauce simmers, heat the water for the pasta. Cook the spaghetti in salted water about half of the way cooked. Drain, reserving some of the water.
  • Taste the sauce and adjust the seasoning if necessary. Add the pasta to the sauce and cook over medium-high heat until all the liquid is absorbed and the pasta is al dente. If the sauce is over-reduced, use the pasta cooking liquid to adjust it.
  • At the last moment, remove the pan from the heat; add the extra-virgin olive oil, butter, basil and cheese. Mix thoroughly until the pasta is an orangy color. Taste again and adjust the salt if necessary. Remove to a platter. Serve.

Tips for Making Oyster Mushroom Spaghetti with Tomato and Basil Sauce:

  • Choose the Right Mushrooms: Select fresh, firm oyster mushrooms with no signs of bruising or sliminess. Smaller mushrooms are more tender and have a milder flavor.
  • Slice the Mushrooms Thinly: Thinly slicing the mushrooms helps them cook evenly and absorb more of the sauce's flavor.
  • Don't Overcrowd the Pan: When cooking the mushrooms, avoid overcrowding the pan, as this can cause them to steam instead of sautéing. Cook them in batches if necessary.
  • Use a Large Pan for the Sauce: Use a large pan or Dutch oven to make the sauce, as it will need to accommodate the mushrooms and spaghetti.
  • Simmer the Sauce: Simmer the sauce for at least 15 minutes to allow the flavors to meld and deepen.
  • Cook the Spaghetti Al Dente: Cook the spaghetti according to the package instructions, but aim for an al dente texture, as it will continue to cook in the sauce.
  • Combine the Spaghetti and Sauce: Once the spaghetti is cooked, toss it with the sauce until well coated.
  • Garnish with Fresh Basil: Before serving, garnish the dish with fresh basil leaves for an aromatic and flavorful touch.

Conclusion:

Oyster mushroom spaghetti with tomato and basil sauce is a delicious, easy-to-make pasta dish that is perfect for a weeknight meal. The combination of tender oyster mushrooms, flavorful tomato sauce, and aromatic basil creates a dish that is both satisfying and refreshing. Whether you are a vegetarian or simply looking for a meatless meal, this recipe is sure to become a favorite. Don't forget to experiment with different types of mushrooms, herbs, and cheeses to create your own unique variations.
