Steps:
- Preheat the oven to 350 degrees F.
- Remove outer membrane from the testicles and slice into 1-inch disks. Toss into flour, seasoned with salt and pepper, and shake of any excess. In a large oven proof skillet add canola oil and heat until it gets to the smoking point. Add garlic and onions and saute until cooked, tossing quickly so as not to burn the garlic. Remove from pan and set aside.
- In the same pan with the oil residue, add the butter and place the disks of the testicles, flat side down, into the hot skillet. Cook until golden brown on both sides. Add the wine, stir in tomato paste until well incorporated, then add back the sauteed onion and garlic mixture. As the dish cooks it will thicken because of the flour dusting on the testicles. Continue to cook on top of the range for about 15 minutes, then place the pan into the preheated oven for another 30 minutes or until testicles are tender. Remove from oven and adjust seasoning. Let rest for approximately 10 minutes so flavor enhances. Garnish with chopped herbs and crispy bread.

CHRISTMAS OYSTER STEW
For years, its been a tradition in my family to eat oyster stew at the start of dinner Christmas night (not Christmas eve). The celery salt and paprika give the stew that red and green Christmas color too. Oyster stew always makes me think of Christmas no matter where or when I eat it. We always had 10 or more people at the table and there were never leftovers of this stew. I still love this recipe and it is my favorite - I've never had anything close, even at fine restaurants.

Tips:
- Use Fresh Oysters: Fresh oysters are essential for making the best oyster stew. Look for plump, firm oysters with a briny smell.
- Clean the Oysters Properly: Scrub the oyster shells thoroughly under running water to remove any dirt or debris.
- Shuck the Oysters Carefully: Use an oyster knife to carefully shuck the oysters, taking care not to spill any of the oyster liquor.
- Reserve the Oyster Liquor: Don't throw away the oyster liquor! It's full of flavor and nutrients, so reserve it to use in the stew.
- Use a Good Quality Stock: A good quality stock is essential for a flavorful stew. Use a seafood stock or a combination of chicken and vegetable stock.
- Don't Overcook the Oysters: Oysters are delicate and can easily overcook. Add them to the stew towards the end of cooking, and cook just until they are heated through.
- Season to Taste: Season the stew to taste with salt, pepper, and other spices. Be careful not to overseason, as the oysters should be the star of the show.
