1/2 cup shredded carrot
1/3 cup bean sprouts
1/4 cup chopped salted peanuts
1/4 cup minced fresh cilantro
2 green onions, thinly sliced

3 tablespoons unsweetened coconut milk
2 tablespoons fresh lime juice plus lime wedges, for serving
2 tablespoons ketchup
2 tablespoons low-sodium soy sauce
2 tablespoons sugar
1 1/2 tablespoons fish sauce
1 teaspoon garlic powder
2 scallions, sliced, plus more for garnish
4 ounces pad Thai rice noodles
All-purpose flour, for dusting
1 pound store-bought pizza dough, at room temperature
1/2 pound peeled and deveined medium shrimp, tails removed and halved lengthwise
Kosher salt and freshly ground black pepper
Sriracha, for drizzling
2 tablespoons salted peanuts, coarsely chopped
1/3 cup mung bean sprouts
1/4 cup fresh cilantro leaves
