SPICY PALOMAS
Steps:
- Combine the pink salt, cayenne and 1 teaspoon sugar in a small bowl, then place in a shallow dish to rim the glasses.
- Juice the grapefruits with a citrus reamer or with the wide holes on a juicer to obtain plenty of pulp but strain out the seeds. (You need 12 to 14 ounces.) Add to a small pitcher.
- Put the jalapeno slices in a cocktail shaker along with the remaining 2 teaspoons sugar and muddle to break the peppers down into a rough mash. Add the tequila and a scoop of ice and shake to infuse; then pour through a strainer into the grapefruit juice and stir to combine.
- Slice the lime into 6 wheels and make a slice halfway into each wheel to hang on each glass. Run the lime along half of the rim of each glass and dip in the pink salt mixture, then garnish with the lime slice. Fill the glasses with ice and divide the Palomas over the top.

Steps:
- Pour some kosher salt on a plate. Rub half of rim of a highball glass with a grapefruit wedge; dip rim of glass in salt. Combine 1/4 cup fresh grapefruit juice, 1 tablespoon fresh lime juice, and 1 teaspoon sugar in glass; stir until sugar is dissolved. Stir in 1/4 cup mezcal or tequila, add ice, and top off with 1/4 cup club soda. Garnish with grapefruit wedge.
MEZCAL PALOMA
A paloma is traditionally made with tequila, grapefruit juice, and lime, but this version uses mezcal instead of tequila for a nice smoky twist! The smoke flavor is due to the underground ovens filled with volcanic rock, coal and wood that are used to cook the agave to produce the mezcal. I like to rim the glass with coarse smoked salt or black salt, but feel free to use regular kosher salt.

Tips:
- Choose ripe grapefruits. The best grapefruits for Palomas are ripe and juicy, with a sweet-tart flavor. Avoid grapefruits that are too sour or bitter.
- Use fresh lime juice. Fresh lime juice is essential for a refreshing Paloma. Bottled lime juice can be used in a pinch, but fresh lime juice is always best.
- Don't skimp on the tequila. A good Paloma should have a generous pour of tequila. Use a high-quality tequila that you enjoy drinking straight.
- Use a good quality soda water. The soda water you use will make a big difference in the taste of your Paloma. Use a sparkling water that is fresh and bubbly.
- Garnish with a lime wedge and a grapefruit slice. This will add a pop of color and flavor to your Paloma.
Conclusion:
The Paloma is a refreshing and flavorful cocktail that is perfect for any occasion. It is easy to make and can be customized to your own taste. So next time you are looking for a delicious and festive drink, give the Paloma a try!
