- In a large saucepan, combine the first eight ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 5-10 minutes or until thickened, stirring occasionally., In a large skillet, cook pork and mushrooms over medium heat until meat is no longer pink; drain., Spread 1/3 cup sauce on the bottom of each of two greased 11x7-in. baking dishes. Place 4 pepperoni slices, 1/4 cup sausage mixture, 2 tablespoons provolone cheese and 1 heaping tablespoonful olives down the center of each tortilla. Roll up and place seam side down in prepared baking dishes. Pour remaining sauce over the top; sprinkle with Parmesan and remaining provolone cheese., Cover and bake one casserole at 350° for 30 minutes. Uncover; bake 5-10 minutes longer or until heated through and cheese is melted. Cover and freeze remaining casserole for up to 3 months., To use frozen casserole: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 30 minutes. Uncover; bake 5-10 minutes longer or until heated through and cheese is melted.

I came up with this from ideas from other recipes.We personally don't like things spicy, which this is not, so if you like more kick to your food, then add some jalapeno peppers or some Tabasco sauce to add for heat.

- In a large skillet pan, spray the pan well with some PAM Spray. Add the chicken pieces and brown for about 5 minutes and no longer pink. Remove the chicken from the pan and place in a food processor. Pulse just 2 or 3 times to shred the chicken into fine pieces. If you don't have a food processor, just shred with two forks very finely.
- Heat oven to 400°F.
- In the same skillet pan, combine the shredded chicken and add the spices to the chicken. Add the tomato paste and the chicken broth or water and stir well with a wire whisk. You can adjust the seasonings to your taste. Cook for about 5 minutes and the sauce has thickened.
- Using a large baking pan, line the pan with some tin foil and spray the foil well with some PAM Spray.The foil will help with cleanup. and I learned after making this that spraying the foil is important because the enchiladas will stick to the foil during cooking.
- Prepare the Enchiladas by spooning the tomato mixture into the individual tortillas. Add a a handful of mozzarella cheese, wrap the tortillas like a burrito. Lay the enchiladas to the pan in a single layer.
- In a small bowl, add the tomato soup and about 1/4 cup of chicken broth or water to help thin it out some. Add the chili powder. Pour the tomato soup to the top of the wrapped tortillas and top with the rest of the mozzarella and the Colby/Jack cheese.
- Bake in the oven for about 20 minutes or until the cheese is melted and the tortillas are slightly browned.

- Heat oven to 350 degrees F. Spray an 8x11x2-inch baking dish with cooking spray.
- Pour chicken broth into a small frying pan, heat to simmer, add chicken breast, cover and simmer until no longer pink, turning once (approximately 25 minutes). Cool and shred.
- In same frying pan, add onions and red pepper. Saute over medium heat until soft, approximately 5 minutes. Remove from heat.
- In a large bowl, place chicken, onion-pepper mixture, beans, corn, cilantro, chilies, 2 cups of the cheese, and sour cream. Toss until thoroughly blended. Add tabasco, salt and pepper to taste.

Bake for 35 minutes, or until sauce bubbles and enchiladas are heated through. Makes 4 generous servings of 2 enchiladas each.

- In a small saucepan, heat sauce until heated through.
- Meanwhile, remove bones from chicken; cut meat into bite-size strips.
- Finely chop dried tomatoes.
- Toss together the chicken, tomatoes, 1/2 cup of the cheese, and green onion.
- To assemble enchiladas, coat a 2-quart rectangular baking dish with nonstick cooking spray.
