1 pound orange roughy, cut into 1 1/2x2-inch pieces
3 tablespoons butter, melted

Steps:

  • Preheat an oven to 500 degrees F (260 degrees C). Move oven rack to position slightly above middle of oven. Generously grease a 13x9-inch baking dish.

4 orange roughy fillets
1 egg
2 tablespoons honey mustard
3/4 cup seasoned bread crumbs
1 teaspoon cayenne pepper
3 teaspoons olive oil

½ cup milk
¼ teaspoon salt
⅓ cup all-purpose flour
1 ½ tablespoons olive oil
1 tablespoon minced garlic
3 tablespoons fresh lime juice

1 tablespoon chopped fresh parsley
2 tablespoons thinly sliced green onion

Steps:

  • Soak fish in milk 10 minutes. Remove, sprinkle with salt and dredge in flour.

1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon lemon pepper seasoning
1 egg white
1/4 cup plain bread crumbs
1/4 cup cornmeal
1 1/2 teaspoon finely grated lemon zest
1/2 teaspoon dried basil or dill

Steps:

  • Preheat the oven to 450 degrees F. Grease a shallow baking dish large enough to hold the fish in a single layer. Combine the flour, salt, and lemon pepper seasoning in a shallow dish.
