2 onions, finely sliced
6 medium Maris Piper potatoes, peeled and thinly sliced (best substitute in North America is the Russet Potato)
250 mL hot chicken or vegetable stock
125 g mature Cheddar cheese, grated

Top with the cooked onions and, finally, the rest of the potatoes, seasoning with salt and freshly ground black pepper between each layer. Pour the hot stock over the top, place over medium heat and bring to the boil. Cover with a lid and simmer for 15 to 20 minutes, until just tender. Preheat the grill (broiler) to high. 25g (1oz) Butter
1 tbsp Vegetable Oil
Salt and Pepper

Steps:

Remove the pan from the heat and place layers of sliced potatoes, onions and cheese, reserving a little of the cheese. Cover and cook gently for about 30 minutes or until the potatoes and onions are cooked. Pre-heat the grill five minutes before the end of the cooking time. Sprinkle the reserved cheese over the top of the mixture, place under grill until the cheese is golden brown and bubbling. Serve straight from the pan.

Tips:

  • Utilize fresh, seasonal vegetables: Pan Haggerty is a great way to showcase the flavors of fresh, in-season vegetables. Choose vegetables that are at their peak ripeness for the best flavor and texture.
  • Don't overcrowd the pan: When layering the vegetables in the pan, be sure not to overcrowd them. This will prevent them from cooking evenly and may result in a soggy Haggerty.
  • Use a variety of vegetables: Don't be afraid to mix and match different vegetables in your Pan Haggerty. This will create a more complex and flavorful dish.
  • Season the vegetables well: Before layering the vegetables in the pan, be sure to season them well with salt, pepper, and any other desired herbs or spices.
  • Use a well-seasoned cast iron skillet: A well-seasoned cast iron skillet is ideal for cooking Pan Haggerty. It will provide an even cooking surface and help to create a crispy crust.
  • Bake until the vegetables are tender and the crust is golden brown: The cooking time will vary depending on the type of vegetables used, but a good rule of thumb is to bake for about 30-40 minutes, or until the vegetables are tender and the crust is golden brown.
