1 (1-lb) venison tenderloin
1/4 cup dry red wine
1/4 cup dried tart cherries
3/4 cup fat-free beef broth
1/2 cup water
1 teaspoon cornstarch
2 tablespoons black-currant jelly

Steps:

  • Grind 1 teaspoon rosemary with coriander seeds and garlic with a mortar and pestle to make a paste, then stir in 1/2 teaspoon oil.

Stir together broth, water, cornstarch, and remaining 1/2 teaspoon rosemary in a bowl and add to skillet. Simmer, stirring, until mixture is thickened, about 5 minutes. Whisk in jelly and salt and pepper to taste.
  • Cut venison into 1/4-inch-thick slices and serve with sauce.

PAN-FRIED VENISON WITH SLOE GIN & PLUM SAUCE

Pan-fried venison with sloe gin & plum sauce image

Splash out on some rich game meat for two, then serve seared to your liking with a deep fruity sauce

Provided by Sara Buenfeld

Categories     Main course

Time 40m

Number Of Ingredients 9

6 juniper berries Finely chopped
2 venison steaks
15g butter
3 plums , 2 quartered, 1 finely chopped
1 garlic clove , finely chopped
3 tbsp sloe gin (or use 2 tsp port)
125ml hot beef stock made with 1 tbsp liquid beef stock (or gluten-free alternative)
thyme sprigs
wilted spinach , to serve (optional)

Steps:

  • Press the juniper and lots of black pepper onto the steaks. Heat the butter in a frying pan until foaming, add the plum quarters and the steaks. Cook to your liking, turning halfway through. Remove and keep warm.
  • Tip the chopped plum and garlic into the pan juices and cook, stirring, until softened. Pour in the sloe gin, allow to sizzle, then add the hot stock. When the plums are really soft, press the mixture through a sieve to remove the skins. Try to get as much pulp through as you can, as this will add flavour and body to the sauce. If it's too thick, add a dash of boiling water.
  • Put the steaks on warmed plates, top with the plum quarters and spoon round some sauce. Scatter over the thyme and a little black pepper. Serve with Fennel Dauphinoise (see 'Goes well with', right) and wilted spinach.

ACORN SQUASH STUFFED WITH VENISON AND CORN

Acorn Squash Stuffed With Venison and Corn image

I had never worked with Acorn Squash before, so I kind of made it on the spot, but it is delicious! This is a yummy, cheap way to use left overs and still have fall flavors. You can substitute the meat for beef or leave it out and add extra veggies for a vegetarian meal. Can be used as a side dish for a larger group accompanying a larger entree.

1/2 teaspoon nutmeg
1 teaspoon olive oil
1/4 teaspoon dried parsley
1/2 tablespoon butter
1/4 cup shredded white cheddar cheese
1 -2 tablespoon water

  • 2. While squash is cooking, cook about 1 cup of rice.
  • 3. In pan, pour about 1 teaspoon olive oil and warm, then add 1 clove of garlic and cook until garlic just starts to brown. Add in venison and cook till browned.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid any mishaps.
  • Season Generously: Venison can be a lean meat, so don't be afraid to season it generously. Use a variety of herbs and spices to create a flavorful dish.
  • Cook to Medium-Rare: Venison is best cooked to medium-rare. This will help to keep it tender and juicy.
  • Make the Plum Sauce Ahead of Time: The plum sauce can be made ahead of time and stored in the refrigerator for up to 3 days. This will save you time on the day of your dinner party.
  • Use Fresh Corn for the Cakes: Fresh corn is essential for making the sweet corn cakes. If you can't find fresh corn, you can use frozen corn, but be sure to thaw it completely before using.
  • Fry the Squash Blossoms Just Before Serving: The squash blossoms should be fried just before serving to ensure that they are crispy.

Conclusion:

This pan-roasted venison with plum sauce, sweet corn cakes, and crisp squash blossoms is a delicious and impressive dish that is perfect for a special occasion dinner. The venison is cooked to perfection and the plum sauce is sweet and tangy. The sweet corn cakes are light and fluffy, and the squash blossoms are crispy and flavorful. This dish is sure to please even the most discerning palate.
