PAN-ROASTED ASPARAGUS WITH GARLIC AND PARMESAN
Steps:
- Remove the woody ends of the asparagus spears. Swirl a 1/2 teaspoon of olive oil in a skillet over medium heat. Add the asparagus spears in a single layer then cover with a lid and cook until the asparagus is bright green and still crisp, about 5 minutes. Uncover and season with sea salt and freshly cracked pepper, to taste. Continue to cook, stirring often until the spears are fork tender yet still a bit crisp, another 1-2 minutes.
- Move the spears to one side of the skillet then add the last 1/2 teaspoon of olive oil to the other side of the skillet. Add the minced garlic to the olive oil, and cook for 30 seconds, stirring the garlic constantly. Toss the spears with the garlic and olive oil for 30 seconds then remove from the skillet to a serving plate. Top with shredded Parmesan cheese and serve immediately. Enjoy.

ROASTED ASPARAGUS WITH CRUNCHY PARMESAN TOPPING
This comforting gratin is ready in less than 30 minutes. Feel free to use the thin asparagus, as noted in the recipe, or use thick asparagus, trimmed and peeled, as in the video. Or, just use the Parmesan breadcrumb topping on another favorite vegetable. It's a welcome and perfectly crisp addition to just about any meat or vegetable.

Steps:
- Heat oven to 500 degrees; while it heats, put bread in, and check frequently until it is lightly toasted and dry. Coarsely grind or grate bread and cheese together (a small food processor is best), and keep crumbs larger than commercial bread crumbs.
- Rinse asparagus, and break off woody bottoms. Lay stalks in a baking dish that will hold them in two or three layers. Toss with bits of butter or the oil, sprinkle with salt and pepper, and place in oven.
- Roast 5 minutes, then shake dish to redistribute butter or oil. Roast 5 minutes more, then test for doneness by piercing a spear with point of a sharp knife; it should slide in but meet a little resistance. (Up to this point, the recipe can be made as much as two hours before serving; just leave asparagus at room temperature).
- Turn on broiler and place rack as close as possible to heating element. Top asparagus with cheese-crumb mixture and run under broiler to brown, a minute or two. Serve hot or at room temperature.

Steps:
- In a 12-inch skillet, over medium, heat the oil.
- Add the garlic and cook until crisp and golden brown, about 5 minutes. Careful not to burn. Burnt garlic tastes bitter. Use a slotted spoon to transfer the garlic to a paper towel-lined plate. Set aside. Add the butter to the skillet and set over medium-high. When the butter has melted, add half of the asparagus with the tips pointing in one direction, and the remaining spears pointing in the opposite direction. (This improves browning.) Sprinkle the asparagus with 1/4 teaspoons salt; using tongs, arrange the spears in an even layer. (They won't quite fit into a single layer.) Cover and cook until the spears are bright green and still crisp, about 5 minutes.
- Season with salt and pepper, then transfer the asparagus to a serving plate. Sprinkle with the toasted garlic and Parmesan cheese. Serve with lemon wedges.

Steps:
- 1. Heat the oil and butter in a 12-inch skillet over medium-high heat. When the butter has melted, add half of the asparagus to the skillet with the tips pointed in one direction; add the remaining asparagus with the tips pointed in the opposite direction. Using tongs, distribute the spears evenly (the spears will not quite fit into a single layer); cover and cook until the asparagus is bright green and still crisp, about 5 minutes. 2. Remove the cover and increase the heat to high; season the asparagus with salt and pepper. Cook until the spears are tender and well browned along one side, about 7 minutes, using tongs to occasionally move the spears from the center of the skillet to the edge to ensure all are browned on 1 side. Transfer asparagus to a serving dish, season with salt and pepper to taste, and if desired, squeeze the lemon half over the spears. Serve immediately. For garlic and parmesan: Heat 2 tablespoons olive oil and 3 medium garlic cloves, sliced thin, in a 12-inch skillet over medium heat; cook, stirring occasionally, until the garlic is crisp and golden but not brown, about 5 minutes. Using a slotted spoon, transfer the garlic to a paper towel-lined plate. Follow the recipe for Pan-Roasted Asparagus, adding butter to the oil in the skillet. After transferring the asparagus to a serving dish, sprinkle it with 2 tablespoons grated Parmesan, the toasted garlic, and lemon juice. Season with salt and pepper to taste; serve immediately.

PAN-SEARED ASPARAGUS WITH CRISPY GARLIC
Before asparagus got moved to its own botanical family, Asparagaceae, in the early 2000s, it was part of the lily family along with onions, chives, shallots and garlic. It makes sense then, that asparagus and garlic make such a good duo. When cooked with care, both can be mild and sweet (or pungent and bitter when cooked carelessly). To highlight the best of both ingredients, gently fry garlic into chips for a crispy topping, then use the lightly infused oil to sauté the asparagus. Both thin and chubby spears work, as would nearly any other vegetable you like with garlic: broccoli, kale, snap peas, fennel and more.

Steps:
- Place a paper towel-lined plate next to the stove. In a medium or large skillet, combine the garlic and olive oil over medium-low heat. Cook, shaking the skillet often, until the garlic is very light golden, 3 to 5 minutes. Remove the skillet from the heat, tilt it, then use a slotted spoon to transfer the garlic to the towel-lined plate, leaving the remaining oil in the skillet. Season the crispy garlic with salt.
- Return the skillet to medium-high heat. Add the asparagus, season with salt and pepper, and cook, shaking often, until bright green, crisp-tender and browned in spots, 4 to 5 minutes. Slide onto a platter, including any oil in the skillet. Top with the garlic chips and season again with salt and pepper.

Tips:
- Choose asparagus spears that are bright green and firm, with tightly closed tips. Avoid spears that are wilted, limp, or have brown spots.
- Trim the asparagus spears by snapping off the woody ends. You can also use a sharp knife to cut off the ends.
- Roast the asparagus in a single layer on a baking sheet. This will help them cook evenly.
- Toss the asparagus with olive oil, salt, and pepper before roasting. This will help them brown and caramelize.
- Roast the asparagus for 10-15 minutes, or until they are tender-crisp. The cooking time will vary depending on the thickness of the spears.
- Serve the asparagus immediately, while they are still hot. You can top them with toasted garlic, Parmesan cheese, or a squeeze of lemon juice.
