PAN-ROASTED CHICKEN BREASTS WITH MARSALA

Pan-Roasted Chicken Breasts With Marsala image

Get the taste and texture of roasted chicken by pan-roasting pieces with a quick pan sauce. Make sure to use a heavy-bottomed pan, such as a cast-iron skillet. The butter thickens and enriches the sauce, but if you don't want to add the extra fat, stir in 1/2 tsp (2 mL) cornstarch dissolved in a little stock or water and boil for 30 seconds. 2 (1 1/2 lb) bone-in skin-on chicken breasts
1 teaspoon canola oil
Sage-Vermouth Sauce
1 large shallot, minced (about 4 tablespoons)
3/4 cup canned chicken broth

Spoon sauce around chicken breast and serve immediatly.

PAN-ROASTED CHICKEN BREASTS WITH ONION AND ALE SAUCE

Pan-Roasted Chicken Breasts With Onion and Ale Sauce image

Cook's Illustrated. "Try to choose 10- to 12-ounce split chicken breasts with skin intact. If split breasts are of different sizes, check the smaller ones a few minutes early to see if they are cooking more quickly, and remove them from the skillet if they are done ahead. Brown ale gives this sauce a nutty, toasty, bittersweet flavor. Newcastle Brown Ale and Samuel Smith Nut Brown Ale are good choices."
