1 teaspoon olive oil
4 ounces thinly sliced pancetta, chopped
2/3 cup whipping cream
1/2 cup whole milk
3 large eggs
3 tablespoons finely chopped fresh Italian parsley leaves
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2/3 cup shredded Parmesan

Steps:

  • Position the rack on the bottom third of the oven and preheat the oven to 400 degrees F.
  • Press the crust into a 9-inch-diameter tart pan with a removable bottom. Trim the edges; set aside.
  • Heat the oil in a heavy medium skillet over medium heat. Add the pancetta and saute until crisp, about 7 minutes. Using a slotted spoon, transfer the pancetta to paper towels and drain. 2 tablespoons olive oil
6 garlic cloves, minced
4 cups all-purpose flour
2 cups grated Parmesan cheese
4 teaspoons baking powder
1 teaspoon salt
2 cups heavy whipping cream

Steps:

  • In a large skillet, saute onions in oil until tender. Add garlic; saute 1 minute longer. , In a large bowl, combine the flour, cheese, baking powder and salt. Stir in cream just until moistened. 1 Tbsp e.v. olive oil
1/4 lb. pancetta or bacon
2 Tbsp unsalted butter, plus 6 tbsp cold cut into cubes
1 pear, cut into small cubes
2 C all purpose flour
1 tbsp baking powder
pinch kosher salt
pinch sugar
1/2 tsp black pepper
1 tsp finely chopped rosemary leaves
1 C heavy cream, plus more for brushing
1/2 C finely grated parmesan cheese

Steps:

  • Heat oven to 450° F. Coat small skillet with olive oil and cook the pancetta over med heat until it is crisp. Drain on paper towels; break it up into pieces when it is cool. Wipe out the skillet and heat 2 Tbsp butter over med heat until it starts to brown; be careful not to let it burn. Add the pear cubes and cook them until they are soft but still holding their shape, about 5 - 7 minutes. Set aside on a plate to cool. Sift into a bowl the flour, baking powder, salt and sugar. Add the remaining butter and cut it in with a pastry blender or your hands until it resembles coarse bread crumbs. Stir in the pepper, rosemary, and pancetta. Add the cream; mix just until the dough has come together. With floured hands, gather the dough into 8 pieces and form them into balls. Place them onto a parchment paper lined baking sheet. Press a well into the center of each with your thumb, place 1 tsp. cooled cooked pears into the well, and pinch the scones closed. Sprinkle the tops with the cheese. Bake the scones for 13 - 14 minutes, or until the tops are golden brown. Remove from the baking sheet and cool on a wire rack. Sprinkle with some more parmesan.
