My wife and I sort of invented this recipe, we think. Chicken should have great flavor and the panko breadcrumbs and olive oil will give it a great crunch! Our kids love it (which is high praise in this house). Hope you enjoy as well!

1 cup mayonnaise
1 teaspoon paprika
¾ cup panko bread crumbs, or as needed
1 teaspoon garlic powder
4 bone-in chicken thighs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking pan with aluminum foil; coat with cooking spray.
  • Combine mayonnaise and paprika in a bowl; mix well.
  • Mix panko and garlic powder together in another bowl.
  • Spread mayonnaise-paprika mixture on each chicken thigh; press into panko mixture to coat. Place in the prepared baking pan; spritz thighs with cooking spray.

3/4 teaspoon salt
1/4 teaspoon black pepper (freshly ground)
5 tablespoons butter (melted)
3 tablespoons mustard (spicy or grainy)
2 teaspoons maple syrup (or honey)
1/4 teaspoon garlic powder
1 1/4 cups panko breadcrumbs
1/3 cup Parmesan cheese (shredded, or about 1/4 cup grated)
1/4 to 1/2 teaspoon paprika (to taste)
2 teaspoons parsley flakes (dried)

Steps:

  • Gather the ingredients.

This simple recipe is my invention. I am a lover of chicken and I especially enjoy baked chicken. I love the dark meat and it is so tasty when it's coated because that seals in the juices keeping the meat tender and delicious.

2 1/2 pound(s) chicken thighs (skinless and boneless and fat removed)
1 package(s) panko bread crumbs
1/4 cup(s) egg whites
- fresh cracked black pepper
- sea salt

Steps:

  • Heat your toaster oven to 375'F. Put the oven on the convection setting.
  • Line your toaster oven baking tray with heavy aluminum foil. Spray the aluminum foil with baking oil
  • Clean the chicken thighs by removing all the excess fat. Wash and pat dry.
  • Put the egg white in a shallow bowl. Put the panko bread crumbs in a shallow bowl.
  • Dip the thighs in the egg white. Roll in the Panko. Make sure you cover all the meat.

Steps:

  • Honestly the above ingredient list is all approximate guesses. I just dumped stuff into the ziplock bag until it looked like seasoned flour.
  • Take all ingredients above (except for chicken thighs) and dump into a gallon size resealable bag.
  • close bag, shake to mix well.
  • preheat your convection oven to 375 degrees Fahrenheit.
  • Rinse and pat dry your chicken pieces.
  • Then take chicken pieces (I did three at a time) and drop into your bag of homemade 'shake 'n bake and shake to coat evenly.
  • lightly oil your broiling pan and then place chicken pieces with space around each one. I personally cooked 6 and then the remaining 4- because that's how much space I had in my broiling pan.
  • place in convection oven set on BAKE (with convection on) at 375 degrees Fahrenheit for 60 minutes.

3/4 cup milk

  • In medium bowl, beat egg and milk together; add salt.

  • Immerse chicken breasts into egg/milk mixture, coating thoroughly.
