Unlike most pancakes, this cardamom-scented version hailing from Finland is baked rather than fried or grilled, giving it a soft, puffed-up interior and a delicately crisp crust.

Time 1h20m

Number Of Ingredients 5

4 eggs
3 c whole milk
1 1/4 c all purpose flour
1 tsp salt
1 stick margarine or butter

Steps:

  • 1. Preheat oven to 375 degrees. Beat eggs & add 1/2 cup of the milk. Gradually add the milk, flour and salt. Beat until thick & smooth.
  • 2. Melt the margarine in a glass bowl and pour into your 9 X 13 pan. Pour the batter over the melted margarine.
  • 3. Bake at 375 for one hour. Sprinkle sugar & cinnamon on top when it comes out of the oven. It will be very "puffy" when you take it out of the oven and it will "cave in" after awhile....but it is supposed to do that. Serve with jam, syrup, honey, berries ... you can use your imagination what to put on top. Yum.

Tips:

  • Choose the right pan: A cast-iron skillet or a non-stick skillet is ideal for making pannukakku. Make sure the pan is large enough to accommodate the batter without overflowing.
  • Use high-quality ingredients: Fresh milk, eggs, and butter will give your pannukakku the best flavor. You can also use a variety of spices and herbs to add flavor to your dish.
  • Don't overmix the batter: Overmixing the batter will make your pannukakku tough. Mix the ingredients just until they are combined.
  • Let the batter rest: Allowing the batter to rest for 30 minutes before cooking will help it to develop a better flavor and texture.
  • Cook the pannukakku over medium heat: Cooking the pannukakku over medium heat will help it to cook evenly without burning.
  • Don't flip the pannukakku: Pannukakku is a one-sided pancake. Do not flip it over during cooking.
  • Serve the pannukakku immediately: Pannukakku is best served immediately after cooking. You can top it with butter, syrup, or your favorite berries.

Conclusion:

Pannukakku is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is easy to make and can be tailored to your own taste preferences. With a little practice, you can make perfect pannukakku every time.
