CHUNKY AVOCADO-PAPAYA SALSA

Chunky Avocado-Papaya Salsa image

This is based on a recipe in Kim Sunée's wonderful new book, "A Mouthful of Stars" (Andrews McMeel). Her recipe is more of a salad, a fusion of Thai and Mexican flavors. I loved the idea of combining avocado and papaya, two subtle, creamy fruits, with crunchy, bright-tasting Asian pears and spicy chiles. The first time I saw the recipe I wanted to test it right away, but I didn't have Asian pears. So I used an apple, and loved it. It's the sweet, crunchy fruit that does the trick, and apples and Asian pears both work. There are onions in the original recipe but I've made them optional.

Tips:

  • Choose the right papaya. For this salsa, you'll want a firm, ripe papaya that is orange in color. Avoid papayas that are green or have blemishes.
  • Use a sharp knife. A sharp knife will help you make clean, even cuts and prevent the papaya from becoming bruised.
  • Remove the seeds from the papaya. Before you dice the papaya, be sure to remove the seeds. You can do this by cutting the papaya in half lengthwise and scooping out the seeds with a spoon.
  • Chop the vegetables evenly. For the best flavor and texture, chop the vegetables evenly. This will help them cook evenly and prevent them from becoming mushy.
  • Use fresh lime juice. Fresh lime juice is essential for this salsa. It adds a bright, citrusy flavor that really brings the salsa to life.
  • Season to taste. Be sure to taste the salsa before serving and adjust the seasonings as needed. You may want to add more lime juice, salt, or pepper.

Conclusion:

This papaya and red onion salsa is a delicious, refreshing salsa that is perfect for summer gatherings. It's easy to make and can be customized to your own taste. So next time you're looking for a new salsa to try, give this one a try. You won't be disappointed!
