2 large ripe papayas
2 ½ cups all-purpose flour
2 tablespoons poppy seeds
1 teaspoon baking soda
1 teaspoon salt
1 ¼ cups white sugar
½ cup unsalted butter, softened
2 large eggs
½ cup buttermilk
½ cup guava juice
1 tablespoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Slice papayas in half lengthwise. Scoop out black seeds and discard. Peel and discard skin. Place flesh in a bowl and mash. Transfer to a strainer and allow to sit for 10 minutes to drain any liquid.
  • Combine flour, poppy seeds, baking soda, and salt in a bowl. Cream sugar and butter together in a separate bowl. Mix in eggs, one at a time, until well blended. Mix in papaya flesh, buttermilk, guava juice, and vanilla. Slowly stir in dry ingredients until just moistened. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 1 hour 15 minutes. Cool in the pan for 10 minutes, then release loaf from the pan onto a wire rack. Let cool completely, about 30 minutes, before slicing.

1 cup white sugar
4 eggs
1 cup mashed ripe bananas
1 cup mashed ripe papaya
¾ cup raisins
½ cup chopped walnuts
⅓ cup diced crystallized ginger

1/2 cup dark rum
3/4 cup sugar
1/3 cup vegetable oil
2 large eggs
2/3 cup milk
1 teaspoon baking soda

3/4 cup coarsely chopped ripe papaya
Butter, for preparing pan

Steps:

  • In a small bowl, combine the raisins with the rum and leave to macerate for 1 hour.
  • Preheat the oven to 350/. In a large mixing bowl, combine the sugar, oil, and eggs. Beat together until blended. Whisk in the milk, then add the baking soda, salt, and flour and blend thoroughly. Fold in the papaya and the raisins, drained. Generously butter an 8 x 5 inch loaf pan and pour the batter into the pan, shaking to help it find its level. Bake the bread for 1 hour, or until the center springs back and the edges are beginning to pull away from the pan. Cool the pan on a rack, then turn out and slice for serving.

1 cup applesauce
1 tablespoon vanilla extract
2 cups white sugar
1/2 medium papaya, pureed to make 2 cups
1/4 teaspoon baking powder

1 package (1/4 ounce) active dry yeast
2 teaspoons sugar
1 cup warm water (110° to 115°)
1 cup warm milk (110° to 115°)
1 egg, lightly beaten
1/2 cup canola oil
1-1/4 teaspoons salt, divided
5-1/2 to 6 cups all-purpose flour
1/4 cup cornmeal
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 cup butter, melted
Pizza sauce or salsa, optional

Steps:

  • In a large bowl, dissolve yeast and sugar in warm water; let stand for 5 minutes. Add the milk, egg, oil, 1 teaspoon salt and 4 cups flour; beat on low speed until smooth. Beat 3 minutes longer. Stir in enough remaining flour to form a soft dough., Turn onto a lightly floured surface; knead until smooth and elastic, about 8-10 minutes (dough will be sticky). Stranded without a car, a toddler under foot and half way through the recipe I realized I was out of the margarine the recipe called for..."Oh bother," what to do? Well, there was always peanut butter in the house, and with nothing to lose at that point, I SUBSTITUTED! The end result was this recipe.

1 teaspoon baking soda
2 eggs
1 1/2 cups flour (plain)
