Categories     Candy

Time 30m

Yield 24 Angel Chins

Number Of Ingredients 5

9 egg yolks
1 egg white
2 cups sugar
2 cups water
1 teaspoon vanilla extract

Steps:

  • Beat egg yolks until light and frothy, then spoon in the beaten egg white.
  • Continue beating until mixture is spongy in texture, then pour into muffin tins that have been buttered.
  • Set tins in a bain-marie (about one inch of hot water in a shallow pan; I use my stove's roasting pan) and bake in 350° F oven about 15-20 minutes.
  • Dissolve sugar in water and bring to a boil, add vanilla extract.
  • Remove papos de anjo from tins, make 3, 4 holes in each one with a toothpick and drop into boiling syrup.
  • Remove from heat, let cool and place in a pyrex.
  • Refrigerate until next day, so papos will soak in the syrup overnight.

Tips:

  • Use fresh eggs: Older eggs won't whip up as well and will result in a flatter cookie.
  • Whip the egg whites and sugar until stiff peaks form: This will help to create a light and airy cookie.
  • Fold the flour into the egg whites gently: Overmixing will toughen the cookies.
  • Bake the cookies at a low temperature: This will help to prevent them from browning too much.
  • Let the cookies cool completely before serving: This will help them to set and develop their full flavor.

Conclusion:

Papas de Anjo (Angel's Chins) are a delicious and delicate cookie that is perfect for any occasion. They are light and airy, with a slightly sweet flavor. These cookies are also very easy to make, and they can be made ahead of time. If you are looking for a special cookie to impress your friends and family, Papas de Anjo is the perfect recipe for you.
