3 eggs, separated
1/2 cup milk
1/2 cup cottage cheese (4 ounces)

1/4 teaspoon ground cumin
1/8 teaspoon ground allspice
1/8 teaspoon ground red pepper
1 (8 ounce) can whole kernel corn, drained
1 cup shredded monterey jack cheese (4 ounces)
1 small onion, chopped

2 T plus 2 t baking pwdr
1 1/2 t cayenne

1/2 cu corn oil
