4 chicken breasts, boneless, skinless
2 tablespoons minced fresh thyme
2 tablespoons minced fresh sage
2 tablespoons minced fresh chives
2 tablespoons minced fresh parsley
3/4 cup panko breadcrumbs
1/4 cup parmesan cheese, grated
salt and pepper
1 tablespoon olive oil
2 egg whites, lightly beaten

Steps:

  • Remove the tenderloins from the chicken and reserve for another recipe.
  • Slightly flatten the chicken breasts with a mallet.
  • Combine the herbs, bread crumbs, grated cheese and salt and pepper.
  • Slowly drizzle the olive oil over the mixture, lightly working the crumbs with your fingertips until the mixture is loose and fluffy.

1/2 teaspoon garlic powder
1/2 cup Progresso™ plain panko crispy bread crumbs
1/2 cup finely shredded Parmesan cheese
1 package (14 oz) uncooked chicken tenders (not breaded)
Tomato pasta sauce, if desired

Steps:

  • Heat oven to 400°F. Spray large cookie sheet with cooking spray.
  • In shallow bowl, mix mayonnaise, herbs and garlic powder. In large resealable food-storage plastic bag, place bread crumbs and cheese. Coat chicken with mayonnaise mixture. Place in bread crumb bag; seal and shake to coat. Place chicken on cookie sheet.

1 garlic clove, peeled
1/4 cup flat leaf parsley
2 slices whole wheat bread (I use low carb)
1/4 cup parmesan cheese, grated
2 tablespoons olive oil
1/4 teaspoon salt
fresh ground black pepper
1 1/2 lbs salmon fillets, skinless
4 teaspoons Dijon mustard

Steps:

  • Heat oven to 400. Lightly coat your baking dish with non-stick spray (I always use olive oil in a Misto- love those things).
  • In a food processor, mince the garlic clove then add the parsley and pulse until combined, about 15 seconds. Add the bread, cheese, oil, salt and a few grinds of black pepper. Pulse until well combined.
  • Arrange the fish or meat in the baking dish. Spread with mustard then pat the crumbs on top of each one.
  • Bake until browned and cooked through-
  • 20 min or so for salmon.
  • 15 min or so for flounder.
  • 25 min or so for chicken.
  • 30 min or so for pork.

1 lb chicken breasts, sliced into strips or 1 lb chicken tenders
1 cup flour
2 cups plain breadcrumbs
2 tablespoons roast chicken seasoning (I like Emerils Chicken Rub seasoning) or 2 tablespoons garlic and herb seasoning (I like Emerils Chicken Rub seasoning)
1 teaspoon garlic powder
1/4 cup grated parmesan cheese
1 egg
nonstick cooking spray
salt and pepper

Steps:

  • Place flour in shallow dish, add salt and pepper to taste.
  • In another shallow dish beat egg.
  • In third shallow dish mix breadcrumbs, seasoning, garlic powder, cheese, and salt & pepper to taste.
  • Dip chicken strips in egg.
  • Dredge chicken in flour.
  • Dip flour dredged chicken in egg.
  • Coat in the breadcrumb mixture.
  • Place coated chicken pieces on cooking sheet that has been sprayed with non-stick cooking spray.
