PARSLEY AND ROMAINE SALAD
I sometimes use parsley as a salad green, adding the leaves whole or cutting them into chiffonade, as I do in this delicate salad. You can dress it with a vinaigrette, or with a simpler combination of 1 tablespoon lemon juice and 3 tablespoons extra virgin olive oil.

PEARL BARLEY SALAD WITH FETA, TOASTED ALMONDS LEMON AND PARSLEY
This recently appeared in the Sunday Life magazine, as 'Freekah salad ..." by renowned chef Karen Martini. I couldn't find freekah - and Karen recommended pearl barley as a 'perfect substitute'. The recipe calls for feta, but I've made it without and it was still delicious. I'm trying to lose a few kilos, so also omitted the oil - still yummy. Have it cold - or warm and season to taste. It goes perfectly with the Greek lamb dish I've posted - also by Karen Martini

Tips:
- For the best flavor, use fresh parsley. If you can't find fresh parsley, you can substitute dried parsley, but use only half the amount.
- Toast the almonds in a single layer in a preheated oven at 350 degrees Fahrenheit for 5-7 minutes, or until they are golden brown and fragrant.
- Use a microplane to zest the lemon. This will give you the most flavorful zest.
- If you don't have a microplane, you can use a fine grater to zest the lemon. Just be sure to grate only the yellow part of the peel, and not the white pith.
- Feel free to add other ingredients to your salad, such as crumbled feta cheese, chopped walnuts, or dried cranberries.
Conclusion:
Parsley salad with toasted almonds and lemon is a refreshing and flavorful salad that is perfect for a light lunch or side dish. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a healthy and delicious salad, give this one a try.
