1 (1 ounce) package ranch dressing mix
2 green onions, minced
4 (12 inch) flour tortillas
½ cup red bell pepper, diced
½ cup diced celery
1 (2 ounce) can sliced black olives
½ cup shredded Cheddar cheese

Steps:

  • In a medium-size mixing bowl, combine cream cheese, ranch dressing mix, and green onions. Spread this mixture on each tortilla. Sprinkle red pepper, celery, black olives, and cheese (if you'd like) over the cream cheese mixture. Roll up the tortillas, then wrap them tightly in aluminum foil.
  • Chill 2 hours or overnight. Cut off ends of the rolls, and slice the chilled rolls into 1 inch slices.

1 package (6 ounces) thinly sliced cooked turkey
1 cup finely chopped dill pickles
2 tablespoons Dijon mustard
1 package (6 ounces) thinly sliced fully cooked ham
3/4 cup finely chopped celery
1/2 cup hickory-flavored barbecue sauce
1 package (6 ounces) thinly sliced cooked roast beef

Steps:

  • In a large bowl, beat two packages of cream cheese until smooth. Add olives. Spread about 3/4 cup each on four tortillas; top each with four slices of turkey. Roll up tightly; wrap in plastic. , In another large bowl, beat two packages of cream cheese with pickles and mustard until blended. Spread on each of four tortillas; top with ham. 1/3 cup prepared pesto sauce
1/4 cup roasted sweet red peppers, drained and chopped

These pinwheels are absolutely delicious... don't wait for a party to make them, whip them up for a weekend brunch or evening snack! You can make these up to 1 day ahead and refrigerate. You should get around 48-50 pinwheels/sandwiches if you slice each bread roll into 8 pieces, but it will depend on how large you slice them, so servings is only estimated. Don't purchase the completely square slices of bread, purchase the sandwich loaf that is higher on the top. Plan ahead these need to chill for a minimum of 2 hours before slicing. You can also make these with fresh steamed asparagus, but I prefer the canned better.

1 (8 ounce) package cream cheese, softened
1/4 cup mayonnaise
6 slices soft sandwich bread (crusts removed, can use white or whole wheat bread I like to use both)
12 ounces smoked salmon
6 canned asparagus spears
1 pinch cayenne (optional)

Steps:

  • In a bowl stir together softened cream cheese and mayo; season with a pinch of cayenne pepper or to taste (if using) mix very well to combine.
  • Remove crusts from ends of bread slices.
  • Using a rolling pin roll out the bread slices to flatten slightly.
  • Divide/spread the the cream cheese mixture between the 6 slices of bread.
  • Divide and top with smoked salmon slices.
  • Place one asparagus spread along the shorter end of each slice of bread (trim ends more if necessary to roll).
  • Roll each slice of bread up firmly.
  • Wrap EACH roll of bread up firmly in plastic wrap and refrigerate for at least 2 hours or up to 24 hours.
  • Remove from fridge, using a serrated knife, slices each roll into 6-8 pieces.
  • Cover and refrigerate pinwheels if not serving immediately.

2 pkg lite cream cheese
1 bunch green onions, finely chopped, tops included
1 Tbsp jalepeno slices, diced
2 Tbsp chopped olives
1 Tbsp pimientos
2 green tortilla wraps (garden spinach herb)

Steps:

  • 1. Place softened cream cheese into mixing bowl. Stir with a wooden spoon to a thick creamy consistancy. If necessary, microwave 10 seconds at a time until it becomes "stir-able."
  • 2. Once softened, add chopped ingredients: green onion, jalepenos, olives and pimientos. Stir until well-blended. (*Adjust jalepenos to taste.)
  • 3. Divide mixture in half, and spread each half onto one tortilla. Roll tightly and wrap with Saran Wrap. Place in refrigerator overnight.
  • 4. Before serving, remove chilled rolled tortillas from refrigerator, unwrap and slice into 3/4" slices. Arrange on platter and serve. Oh-so pretty! And scrumptious to boot!

1 pkg tortillas, flour - large (burrito size)
1/4 c onion, minced
1/4 c black olives, chopped
1/3 c celery, minced
1/4 c red bell peppers, minced
1/4 c green bell peppers, minced
2 - 3 Tbsp ranch style dressing mix, dry
2 pkg cream cheese, room temperature - 8 oz. each

Steps:

  • 1. You'll need 3 or 4 large flour tortillas to make these pinwheels.
  • 2. Mix your cream cheese and 2 tbsp. dry ranch dressing mix with your mixer. Taste and see if you want more ranch flavor and adjust to your taste. Add in your minced onion, chopped black olives, pimentos, minced bell peppers and stir with a spoon till it is mixed well.
  • 3. Spread out on a large tortilla by dropping large tbsp. of mixture onto the tortilla. Spread it out evenly and as close as possible to the edges. Next, roll up the tortilla as tightly as possible.
  • 4. Wrap your rolls individually with plastic wrap and refrigerate overnight.
  • 5. When ready to serve slice with a steak knife or serrated edge knife and cut medium slices. You should be able to get about 10 slices per roll. The end pieces I usually eat or give to my nephews. Serve on a festive tray and enjoy.
