Yield 8

Number Of Ingredients 19

3 medium garlic cloves, minced
6 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon sugar
1 tablespoon sesame oil
1 teaspoon ground ginger
¾ teaspoon hot red pepper flakes
2 tablespoons mayonnaise
¼ cup vegetable oil
2 tablespoons salt
1 pound penne pasta
8 ounces broccoli florets
1 pound rare deli roast beef, sliced 1/8 inch thick and cut into bite-size strips
3 medium carrots, peeled and coarsely grated
1 medium red bell pepper, cut into bite-size strips
2 cups bean sprouts
3 green onions, thinly sliced
½ cup chopped roasted (or honey-roasted) peanuts
¼ cup chopped fresh cilantro

Steps:

  • Mix garlic, soy sauce, vinegar, sugar, sesame oil, ginger, and pepper flakes in a 2-cup Pyrex measuring cup. Whisk in mayonnaise until smooth, then in a slow steady stream, whisk in oil to make an emulsified dressing; keep chilled until ready to toss with salad. Store in a clean jar with lid.
  • Bring 1 gallon of water and 2 tablespoons of salt to boil in a large soup kettle. Add pasta and, using package times as a guide, boil, stirring frequently and adding broccoli the last 1 minute, until just tender. Drain thoroughly (do not rinse) and dump onto a large, lipped cookie sheet. Set aside while preparing remaining salad ingredients.
  • Place all salad ingredients (except soy-ginger dressing) in a large bowl or transfer to a gallon-size zipper bag. (Can be covered and refrigerated several hours at this point). When ready to serve, add dressing; toss to coat and serve.

PASTA SALAD WITH BROCCOLI AND PEANUTS

PASTA SALAD WITH BROCCOLI AND PEANUTS image

Categories     Pasta

Number Of Ingredients 10

Coarse salt
½ pound whole-wheat fusilli
2 heads (2 pounds) broccoli
3 tablespoons vegetable oil
½ teaspoon red-pepper flakes
¼ cup rice vinegar
2 tablespoons smooth peanut butter
3 tablespoons soy sauce
1 bunch scallions, thinly sliced crosswise (1 cup)
½ cup roasted peanuts, coarsely chopped

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente according to package instructions. Drain, and rinse under cold water; set aside. Meanwhile, trim 1 inch from the stem end of broccoli stalks. Using a vegetable peeler or paring knife, peel outer layer of stalks; thinly slice crosswise. Separate florets into bite-size pieces. Heat 1 tablespoon oil in a large skillet over medium.Add pepper flakes, broccoli, and ¾ cup water; cover and cook until broccoli is crisp-tender, 6 to 8 minutes. Uncover and cook until liquid has evaporated and broccoli is tender, 2 to 4 minutes. In a large bowl, whisk together remaining 2 tablespoons oil, vinegar, peanut butter, and soy sauce until smooth. Add cooled pasta, broccoli, scallions, and peanuts; toss to combine. Serve immediately, or refrigerate and serve chilled.

Tips:

  • Choose the right pasta. Short, sturdy pastas like penne, rotini, or farfalle are ideal for pasta salads as they can hold up well to the dressing and other ingredients. You can also use long pastas like spaghetti or fettuccine, but they may be more difficult to toss and eat.
  • Cook the pasta al dente. This means cooking it until it is just tender but still has a slight bite to it. Overcooked pasta will become mushy and won't hold up well in a salad.
  • Cool the pasta before adding it to the salad. This will help prevent the pasta from absorbing too much of the dressing and becoming soggy.
  • Use fresh, high-quality ingredients. This will make a big difference in the flavor of your salad. If possible, use organic produce and fresh herbs.
  • Don't be afraid to experiment with different flavors. There are endless possibilities when it comes to pasta salad dressings and toppings. Try different combinations of ingredients until you find one that you love.

Conclusion:

Pasta salad is a refreshing, versatile dish that is perfect for summer gatherings or potlucks. It is easy to make and can be customized to your liking. With so many different recipes to choose from, you are sure to find one that you will enjoy. So next time you are looking for a light and flavorful meal, give pasta salad a try.
