8 ounces ziti pasta
1 pound cooked ham, cubed
1 large red bell pepper, cut into 1 inch pieces
1 large green bell pepper, cut into 1 inch pieces
1 large red onion, coarsely chopped
15 small sweet pickles, chopped, juice reserved
1 cup cherry tomatoes, halved
1 cup mayonnaise
½ cup sour cream
2 ½ teaspoons beef bouillon granules
1 tablespoon white vinegar
½ teaspoon salt
¼ teaspoon ground black pepper
2 cloves garlic, minced

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large bowl, mix together the drained pasta, ham, peppers, onion, pickles and tomatoes.
  • In a small bowl, whisk together the mayonnaise, sour cream, beef bouillon granules, vinegar, salt, pepper, garlic and 1/2 cup of reserved pickle juice. Fold into the salad and toss gently until evenly coated. Chill overnight to allow the flavors to blend. Serve near room temperature.

In summer, however, my husband doesn't care for hot meals, so I make it as a main dish. We're recent city transplants with two young children, ages 6 and 3.

2 tablespoons milk
1/4 teaspoon salt
Additional Parmesan cheese

350 g spiral penne (tri-coloured is wonderful) or 350 g wheel pasta (tri-coloured is wonderful)
225 g ham (chopped)
225 g peas
3 tablespoons parmesan cheese (freshly-grated)
2 tablespoons parsley (finely-chopped)
1/3 cup olive oil (can reduce this amount to your personal preference)
2 tablespoons balsamic vinegar
2 tablespoons red wine vinegar
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
salt and pepper

Steps:

  • Boil pasta in a large pot of salted water until firm. (I always add a stock cube to the water to improve the flavour-Maggi pasta stock cubes are ideal.).
  • Boil or microwave the peas until tender.
  • Add drained pasta, peas, parsley and ham in a large bowl and toss well.
  • Shake dressing ingredients together in a jam jar and pour over pasta salad.
  • Add parmesan cheese and serve.
  • Note: This tastes great the next day.

2 medium green onions, chopped (2 tablespoons)
1/3 cup mayonnaise or salad dressing
1/3 cup ranch dressing
1/8 teaspoon freshly ground pepper

Steps:

  • Place potatoes in 4-quart Dutch oven; add enough water just to cover potatoes. Cover and heat to boiling; boil 4 minutes. Remove potatoes from water with slotted spoon.
  • Add pasta to boiling water in Dutch oven; cook and drain as directed on package, adding broccoli for last 2 minutes of cooking. Cool potatoes, pasta and broccoli slightly. Refrigerate about 1 hour or until completely chilled.

TOMATO BASIL DRESSING:
1 cup chopped fresh tomatoes
1/4 cup chopped fresh basil
2 tablespoons chopped green onions
2 tablespoons olive oil
2 tablespoons lemon juice
1 garlic clove, minced
1/2 teaspoon sugar
1/4 teaspoon salt, optional
1/4 teaspoon pepper
SALAD:
2-1/2 cups uncooked spiral pasta
1 cup cubed fully cooked ham
1 can (2-1/4 ounces) sliced ripe olives, drained
1/3 cup chopped fresh basil

Steps:

  • In a large bowl, combine tomatoes, basil, onions, oil, lemon juice, garlic, sugar, salt and pepper if desired. Cover and refrigerate for at least 15 minutes. , Meanwhile, cook pasta according to package directions until firm to the bite; drain and rinse with cold water. Transfer to a large salad bowl. Stir in the ham, olives and basil. Pour dressing over salad; toss to coat.

My family really loves this pasta salad. It is mighty tasty. I make this as a side dish for many different meals. It's is a great salad anytime of the year. It's not just for summer cookouts. If making for a crowd..just double... I hope you enjoy it as much as my family and friends do..

8 oz pasta of choice
4 Tbsp white wine vinegar, i have used red also
2 Tbsp dijon mustard
2/3 c extra virgin olive oil
2/3 c sour cream
1/2 c red onion, minced
6 oz cooked ham, diced small
3/4 c frozen baby peas, thawed
2 ribs celery, diced
1/2 c cheddar cheese, shredded
2 hard boiled eggs, chopped
2 Tbsp fresh dill, chopped..i have used dried dill
2 Tbsp milk
2 tsp salt
pepper to taste

Steps:

  • 1. Cook pasta according to package instructions. Drain well and let cool slightly. Transfer to a large bowl.
  • 2. In a small bowl, combine the vinegar and mustard. Slowly drizzle in the olive oil while whisking.
  • 3. Whisk in the sour cream and season with 2 teaspoons salt and pepper, to taste.
  • 4. Add the onion, ham, peas, celery, cheese, eggs and dill to the pasta and mix. Add in the dressing and stir to coat the pasta. Season with more salt and pepper as desired. ** I have used Turkey, Tuna, Salami, Pepperoni to this before..all are delicious!

1/4 cup grated Parmesan cheese
1/4 cup olive or vegetable oil
2 tablespoons chopped fresh parsley

1 teaspoon chopped fresh oregano leaves or 1/4 teaspoon dried oregano leaves
1 teaspoon chopped fresh marjoram leaves or 1/4 teaspoon dried marjoram leaves

2 tablespoons white vinegar
1 clove garlic, finely chopped
