Time 1h

Yield 4 to 6 servings

Number Of Ingredients 12

2 tablespoons olive oil
1/2 pound pasta, small tubes or shells
3 tablespoons extra virgin olive oil
3 large red and/or yellow bell peppers
1 medium onion, julienned
1 teaspoon salt
1/2 teaspoon finely ground black pepper
2 to 3 cloves garlic, minced
2 teaspoons Hungarian or Spanish paprika
1 large tomato, seeded and diced
1/2 cup sour cream
3 dashes hot sauce

Steps:

  • Bring 1 gallon salted water to a rolling boil in a large stockpot. Add 1 tablespoon olive oil and pasta and cook until al dente, about 6 to 8 minutes. Drain in a colander, shaking vigorously, and immediately transfer to an oiled cookie sheet or clean countertop to cool. When cooled, transfer to a bowl, and toss with a little olive oil. Cover with plastic wrap and set aside at room temperature.
  • Meanwhile, roast bell peppers over a gas flame or on a tray under the broiler. Keep turning so the skin is evenly charred, without burning and drying out the flesh. Transfer charred peppers to a paper or plastic bag, tie the top closed and let steam until cool to the touch, about 15 minutes. To peel peppers, pull off the charred skin by hand and then, only if necessary, dip the peppers briefly in water to remove any blackened bits. (Do not peel the peppers under running water since that would wash away the flavorful juices.) Once peeled, cut away stems, seeds and veins, and slice peppers into strips.
  • Heat remaining tablespoon olive oil in a large skillet over high heat. Add onions, salt, and pepper, and cook until golden brown. Lower heat to moderate, add garlic, cook 1 minute, then add paprika, and cook 1 minute more. Add red peppers and tomatoes, cook an additional 1 to 2 minutes, and remove from heat.
  • Transfer to a medium bowl and combine with sour cream and hot sauce. Pour over reserved pasta, toss well, and serve.

PASTA SALAD WITH SAUSAGE, PEPPERS & ONIONS RECIPE - (4.3/5)

Pasta salad with sausage, peppers & onions Recipe - (4.3/5) image

Provided by KatrinaB

Number Of Ingredients 12

2 Cups elbow pasta
1/2 pound hot Italian sausage
1 Red pepper
1 Poblano pepper
1/2 red onion
3 Tablespoons white balsamic vinegar
3 Tablespoons Fiore Tuscan Herb Olive Oil
1 Teaspoon salt
1/2 Teaspoon pepper
6 Basil leaves, chopped
1 Teaspoon fresh oregano, chopped
1/2 Cup shredded Parmesan

Steps:

  • Cook elbow pasta as directed on box, drain and set aside. Heat gas grill to 400 degrees. Cook sausage turning to evenly brown all sides until thoroughly cooked (about 8 minutes. Remove and set aside covered in foil. Grill peppers until charred on all sides (about 2 minutes per side)and place in a bowl covered in plastic wrap for 10 minutes. Meanwhile, chop onion into small pieces. In a large bowl whisk together the vinegar, olive oil, salt and pepper. Add fresh chopped herbs. Cut sausage into small bite sized pieces. Next, peel peppers, remove seeds and finely chop (when handling the poblano pepper you may want to use disposable gloves). Toss pasta, sausage, Parmesan, peppers and onion with the dressing. Serve right away or chill and serve cold.

Tips:

  • Choose the right type of pasta. Short pastas like penne, rotini, or bow-tie are great for pasta salads because they hold the sauce well. You can also use long pastas like spaghetti or linguine, but be sure to cut them into smaller pieces before adding them to the salad.
  • Cook the pasta al dente. Al dente means "to the tooth" in Italian, and it refers to the ideal texture for cooked pasta. Al dente pasta is cooked through but still has a slightly firm bite to it. This will help the pasta hold its shape and not become mushy in the salad.
  • Use a flavorful dressing. The dressing is what really brings a pasta salad together. You can use a simple vinaigrette, a creamy dressing, or a pesto sauce. Be sure to use fresh herbs and spices to give the dressing plenty of flavor.
  • Add plenty of vegetables. Vegetables add color, texture, and nutrients to pasta salads. You can use any type of vegetables you like, but some popular choices include tomatoes, cucumbers, bell peppers, onions, and olives.
  • Don't forget the protein. Protein helps to make pasta salads a more satisfying meal. You can add cooked chicken, beef, pork, or seafood to your pasta salad. You can also use beans, lentils, or tofu for a vegetarian option.
  • Chill the pasta salad before serving. This will help the flavors to meld and the salad will be more refreshing. You can chill the pasta salad for at least 30 minutes, or up to overnight.

Conclusion:

Pasta salad is a versatile and delicious dish that can be enjoyed for lunch, dinner, or a potluck. With so many different variations, there's a pasta salad recipe for everyone. So next time you're looking for a quick and easy meal, give pasta salad a try. You won't be disappointed!
