4 tablespoons butter
1 (16 ounce) package sliced baby bella mushrooms
½ tablespoon minced fresh garlic
½ pound diced bacon
1 medium yellow onion, diced
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried parsley
1 teaspoon dried minced onion
1 teaspoon ground black pepper
1 tablespoon garlic powder
¼ teaspoon ground thyme
¼ teaspoon salt
1 (16 ounce) jar Alfredo sauce
2 ½ cups milk
1 (8 ounce) package shredded mozzarella cheese
½ cup shredded Parmesan cheese, divided
¼ teaspoon chopped fresh parsley

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.

8 ounces baby portabella mushrooms, sliced
2 tablespoons butter
2 tablespoons oil
1 large onion, diced fine
1 (8 ounce) bag Baby Spinach (pre washed)
3 teaspoons fresh rosemary, chopped fine
1 (6 ounce) can tomato paste
1 cup marsala wine
1 cup prepared onion dip (Dean's Lite)
3 tablespoons fresh flat-leaf parsley, chopped
1 lb pasta
1/2 cup parmesan cheese, grated
salt and pepper

2 tbsp olive oil
1 small onion, finely chopped
150g baby mushrooms, halved
150g tagliatelle
2 garlic cloves, crushed
200g low-fat crème fraîche
15g parmesan or vegetarian alternative, grated
120g baby spinach
½ tsp chilli flakes (optional)

Steps:

  • Heat the oil in a medium saucepan over a medium heat and fry the onion and mushrooms for 10 mins, or until softened and browned slightly. Meanwhile, cook the pasta following pack instructions.
  • Add the garlic to the pan with the mushrooms and cook for 2 mins more. Tip in the crème fraîche and parmesan, stir to combine, then add the baby spinach. Set aside.
  • Remove the pasta from the heat and drain, reserving 25ml of the water. The key to giving a portobello (or any mushroom) dense texture is to cook it slowly in oil so that most of its moisture is driven out. My biggest successes came in taking whole mushrooms and cooking them, covered, for as long as two hours. Nearly as good, however, and more than twice as fast, is to cut up the mushrooms and cook them in oil, uncovered, for 30 to 45 minutes. At that point, you not only have fabulous mushrooms, which you can use in a pasta sauce, as I do here, or to top salads or stir into rice dishes, but you also have very good-flavored oil. To further improve the mushrooms' flavor, I like to use the trick popularized by Marcella Hazan: add a few reconstituted dried porcini to the portobellos.

8 ounces portobello mushrooms
3 cloves garlic
2 or 3 thyme sprigs
1/2 cup extra virgin olive oil

1/4 cup dried porcini mushrooms, optional

1 pound penne or other cut pasta

  • Trim hard parts from mushrooms and discard. Rinse mushrooms quickly to remove grit; cut caps into slices and stems into small chunks. Combine in a medium skillet with 1 clove garlic (crushed and peeled), thyme, olive oil and some salt and pepper. Cook over sufficiently low heat so that mixture bubbles but mushrooms do not brown. Cook, stirring occasionally, until garlic begins to color. Add tomatoes and raise heat to medium high. Cook, stirring occasionally, until they break up and become saucy, about 15 minutes.
  • Meanwhile, cook pasta until it is tender but not mushy. Taste sauce and adjust its seasoning. When pasta is done, drain it, toss with sauce, top with Parmesan, and serve.

½ cup hot water
½ (16 ounce) package farfalle (bow tie) pasta
3 tablespoons olive oil
