BUTTERNUT SQUASH AND CHICKEN PASTA
The butternut squash somewhat melts into a delicious sauce coating the chicken and the pasta with all its lovely goodness. I got the idea from Everyday Italian's Giada DeLaurentis but left out the shrimp, eggplant and use chicken instead.

Tips for Cooking Pasta with Butternut Squash and Rosemary:
- Choose the right type of pasta. Short, sturdy pastas like penne, rigatoni, or shells are ideal for this dish because they can hold the sauce well.
- Roast the butternut squash in advance. This will save you time and help the squash develop a deeper flavor.
- Use fresh rosemary. Dried rosemary can be used in a pinch, but fresh rosemary will give the dish a more vibrant flavor.
- Don't overcrowd the pan. When cooking the squash and onion, make sure to give them plenty of room so they can brown properly.
- Use a good quality olive oil. Extra virgin olive oil is the best choice for this dish because it has a robust flavor that will complement the other ingredients.
- Season the dish to taste. Salt, pepper, and grated Parmesan cheese are all essential seasonings for this dish.
- Serve immediately. This dish is best served hot, so make sure to have everything ready before you start cooking.
Conclusion:
Pasta with butternut squash and rosemary is a delicious and versatile dish that can be enjoyed for lunch or dinner. It's also a great way to use up leftover roasted butternut squash. With its combination of sweet, savory, and earthy flavors, this dish is sure to please everyone at the table.
