PASTA WITH FRESH TOMATO SAUCE AND RICOTTA

Pasta With Fresh Tomato Sauce and Ricotta image

This wonderful pasta is made with nothing more than fresh tomato sauce and good ricotta, plus a little pecorino. It's most delicious if you keep the pasta quite al dente; use just enough sauce, no more; give it a good pinch of crushed red pepper; and season it with enough salt of course.

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 8

1 pound dried pasta, such as farfalle or penne
Salt and pepper
2 tablespoons butter, softened
Crushed red pepper (optional)
2 ½ cups Quick Fresh Tomato Sauce, warm (see recipe)
6 ounces ultra-fresh ricotta, at room temperature
Grated pecorino
Basil leaves, for garnish

Steps:

  • Cook the pasta in a large pot of well-salted water, making sure to keep it quite al dente.
  • Put butter in a wide deep skillet over medium heat. Add drained pasta to the pan and season with salt, pepper and crushed red pepper, if using.

  • Transfer pasta to a warm serving bowl and dot top with spoonfuls of ricotta. Sprinkle lightly with pecorino and garnish with a few torn basil leaves.

Yield Servings: Makes 6 servings

Number Of Ingredients 14

1 large head of garlic, top 1/2 inch cut off
6 tablespoons extra-virgin olive oil, divided
4 ears of fresh corn with husks
6 tablespoons fresh lemon juice
4 teaspoons grated lemon peel
8 ounces capellini
2 cups (loosely packed) mixed greens
2 cups torn radicchio leaves
1 cup fresh ricotta cheese (7 to 8 ounces)
1/2 cup finely grated Parmesan cheese plus shaved Parmesan for garnish
1/2 cup chopped fresh parsley
1/3 cup thinly sliced fresh basil leaves
1/4 cup chopped fresh chives
1/4 cup chopped fresh dill

Steps:

  • Preheat oven to 400°F. Place head of garlic on sheet of foil. Drizzle with 2 tablespoons oil; wrap foil around garlic and crimp to seal tightly. Place garlic and corn on rimmed baking sheet. • Squeeze garlic out of skins into large bowl; add any oil from foil. Add lemon juice, lemon peel, and 3 tablespoons oil; mash garlic, then whisk mixture. Shuck corn; cut kernels from cob and transfer to same bowl.
  • Meanwhile, cook pasta in pot of boiling salted water until tender but still firm to bite. Drain. Rinse with cold water; drain well. Place in medium bowl; toss with 1 tablespoon oil. Using kitchen shears, cut pasta crosswise several times.
  • Add pasta, greens, radicchio, ricotta, grated Parmesan, and herbs to bowl with garlic mixture; toss to coat. Season with salt and pepper. Garnish with shaved Parmesan.

ALMOST AS SIMPLE PASTA WITH PARMESAN, HERBS, AND FRESH GARLIC

Almost As Simple Pasta With Parmesan, Herbs, and Fresh Garlic image

Another family favorite that lends itself to easy variations -- tweak the taste to complement the day's main dish by your choice of herbs. You probably have all these ingredients handy in your pantry and refrigerator. I swear the kids would eat this every day if I'd make it that often. I can't personally vouch for freezing it, but I know that it reheats well in the microwave after being refrigerated. Cooking time is mainly cooking the pasta.

CREAMY PASTA WITH RICOTTA AND HERBS

Creamy Pasta With Ricotta and Herbs image

In this simple, springy pasta, milky ricotta thinned out with a little starchy pasta cooking water makes for a saucy, soupy dish that's seasoned with loads of black pepper and herbs. For the best flavor, use at least three different kinds of herbs, break out some nicer olive oil and look for fresh ricotta. Lemon lovers can grate in the zest of half a lemon as well.

Time 20m

Yield 4 servings

Number Of Ingredients 7

Salt
1 pound short pasta, such as shells, cavatappi, chiocciole, farfalle, ditali or wagon wheels
12 ounces fresh, whole-milk ricotta (about 1 1/2 cups)
3/4 cup freshly grated Parmesan, plus more for serving
1/2 cup extra-virgin olive oil, plus more for serving
1 tablespoon coarsely ground black pepper, plus more for serving
2 1/2 cups coarsely chopped soft herbs, such as basil, chives, fennel fronds, parsley, mint, tarragon, chervil or dill (try for a combination of at least 3 kinds)

Steps:

  • Bring a large pot of well-salted water to a boil over high heat. Add the pasta and cook until al dente, according to package instructions. Reserve 2 cups pasta cooking water, then drain the pasta.
  • In the same pot, make the sauce: Add ricotta, Parmesan, olive oil, pepper and a large pinch or two of salt, and stir until well combined.
  • Add 1 cup pasta water to the sauce and stir until smooth. Add the pasta and herbs, and continue to stir vigorously until the noodles are well coated. Add more pasta water as needed for a smooth, soupy sauce. Taste and add more salt if needed.
  • To serve, spoon the pasta into bowls and finish with more Parmesan, olive oil and pepper.

Tips:

  • Use fresh and flavorful herbs for the best results. Basil, chives, mint, parsley, and thyme are all great choices.
  • Add the ricotta cheese to the pasta while it is still hot so that it melts and coats the noodles evenly.
  • If you don't have ricotta cheese, you can substitute cottage cheese or cream cheese.
  • Add some grated Parmesan or Romano cheese to the pasta for extra flavor.
  • Serve the pasta immediately, garnished with fresh herbs and a drizzle of olive oil.

Conclusion:

This pasta with ricotta and fresh herbs is a simple but delicious dish that is perfect for a quick and easy meal. The ricotta cheese adds a creamy and flavorful sauce to the pasta, while the fresh herbs add a bright and lively flavor. This dish is also very versatile, and you can add other ingredients such as cooked chicken, vegetables, or nuts to make it a more complete meal.
